Eggs Benedict Bake Recipe | Land O’Lakes image

An overnight egg bake with all the flavors of eggs benedict without the hassle. Chopped English muffins, Canadian bacon and eggs are baked and topped with homemade hollandaise sauce.

Egg Bake
6 English muffins, cut into 1-inch cubes
6 ounces Canadian-style bacon, chopped
1 1/2 cups milk
12 large Land O Lakes® Eggs
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon pepper
Hollandaise Sauce
1/4 cup water
3 large Land O Lakes® Eggs (yolks only)
1/2 cup Land O Lakes® Butter softened
1 tablespoon lemon juice
1/4 teaspoon Dijon mustard
2 to 3 drops hot pepper sauce
Paprika, if desired

Steps:

  • Spray 13x9-inch baking dish with no-stick cooking spray. Place half of English muffin cubes into prepared baking dish; sprinkle with half of Canadian bacon. Top with remaining English muffin cubes and Canadian bacon.
  • Whisk milk and eggs together in bowl. Season with onion powder, salt and pepper. Pour egg mixture evenly over ingredients in baking dish, gently pressing down to soak English muffin cubes. Cover; refrigerate 4 hours or overnight.
  • Heat oven to 350°F. 
  • Bake, uncovered, 45-55 minutes or until puffed and golden brown and knife inserted in center comes out clean.
  • Place water and egg yolks into 1-quart saucepan; whisk until well mixed. Cook over low heat, whisking constantly, 2-3 minutes or until egg mixture begins to thicken. Add softened butter, 1 tablespoon at a time, whisking constantly, making sure butter melts slowly and sauce begins to thicken without scrambling eggs. Slowly whisk in lemon juice, Dijon mustard and hot sauce. 
  • Serve egg bake warm topped with hollandaise sauce. Sprinkle with paprika, if desired.

Sauce
1 (9-ounce) package hollandaise sauce mix
1 cup milk
1/4 cup Land O Lakes® Butter
Eggs
6 large Land O Lakes® Eggs
6 (1-ounce) slices deli ham or Canadian bacon
2 tablespoons Land O Lakes® Butter with Canola Oil
3 English muffins, split, toasted
6 (3/4-ounce) slices Land O Lakes® Deli American
Chopped fresh chives, if desired
Pepper, if desired

Steps:

  • Prepare hollandaise sauce according to package directions, using milk and butter. Cover; keep warm. Set aside.
  • Pour water into deep 12-inch skillet to 3 inches in depth. Bring water to a gentle boil over medium heat. Break 1 egg at a time into custard cup or small shallow bowl. Hold bowl close to water; slip egg into water. Repeat with remaining eggs.
  • Cook 4-5 minutes or until whites are completely set and yolks begin to thicken but are not hard. Carefully remove eggs from water with slotted spoon.
  • Place ham into 10-inch skillet; cook over medium heat, turning occasionally, 2-3 minutes or until heated through.
  • Spread 1 teaspoon Butter with Canola Oil onto cut sides of each muffin. Place bottom half of muffins onto serving plates; top each with 1 slice cheese, 1 slice ham and 1 cooked egg. Spoon 2 tablespoons hollandaise sauce over egg. Garnish with chopped chives and pepper, if desired. Serve immediately.

It can be used as cake filling and frosting, you can fill a no bake pie crust with it, you can layer it in a parfait, the ideas are endless. You can also mix in whatever goodies you would like. Warning: This does contain raw eggs. If this makes you uncomfortable, you can probably substitute pasturized eggs, although I've never tried it. I just make sure to inspect my eggs for nicks and cracks and only use those with perfect shells. Cook time is chilling time.
