Peanut brittle is a holiday favorite treat.

2 3/4 cups sugar
1 cup water
3/4 cup light corn syrup
1/4 cup Land O Lakes® Butter
1 pound Spanish peanuts
1 teaspoon vanilla
1/4 teaspoon baking soda

Steps:

  • Butter 2 15x10x1-inch baking pans; set aside.
  • Place sugar, water and light corn syrup into saucepan. Bring to a boil over medium-high heat 8-10 minutes or until candy thermometer reaches 280°F or small amount of mixture dropped into ice water forms a hard but pliable strand.
  • Add butter and peanuts; cook, stirring constantly, 4-5 minutes or until temperature reaches 300°F or small amount of mixture dropped into ice water forms a hard brittle strand. Remove from heat. Add vanilla and baking soda; stir until combined.
  • Immediately pour mixture onto prepared baking sheets; spread evenly to about 1/4-inch thickness. Cool completely.
  • Break into pieces. Store in container with tight-fitting lid.

1 cup sugar
1 cup Land O Lakes® Butter softened
1 teaspoon vanilla
2 cups all-purpose flour
1/2 teaspoon salt
1 cup salted peanuts or chopped salted cashews
1 cup semi-sweet chocolate chips
Glaze
1/2 cup powdered sugar
1 tablespoon creamy peanut butter
1 to 2 tablespoons hot water

Steps:

  • Heat oven to 375ºF.
  • Combine sugar, butter and vanilla in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add flour and salt; beat at low speed until well mixed. (Mixture will form clumps.) Stir in peanuts and chocolate chips by hand.
  • Press dough onto bottom of ungreased 15x10x1-inch baking pan. Bake 15-25 minutes or until edges are golden brown. Cool completely.
  • Stir together powdered sugar and peanut butter in medium bowl. Gradually add enough hot water for desired glazing consistency. Drizzle over cooled bars. Cut into bars or break into irregular pieces..
