Bread Pudding
2 cups Land O Lakes® Half & Half
1/3 cup firmly packed brown sugar
1/4 cup Land O Lakes® Butter melted
5 large Land O Lakes® Eggs
2 tablespoons orange juice
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/8 teaspoon ground nutmeg
4 large glazed raised doughnuts, cut into 3/4-inch pieces
Cinnamon Glaze
3/4 cup powdered sugar
1 tablespoon Land O Lakes® Cinnamon Sugar Butter Spread
1/2 teaspoon vanilla extract
1 to 2 tablespoons Land O Lakes® Half & Half

Steps:

  • Heat oven to 350°F. Spray 1 1/2-quart baking dish with no-stick cooking spray. Set aside.
  • Combine all pudding ingredients except doughnuts in large bowl; mix well. Add doughnut pieces; mix until coated. Let mixture stand 5 minutes.
  • Spoon into prepared dish. Bake 45-50 minutes or until puffed and toothpick inserted in center comes out clean. Cool slightly.
  • Meanwhile, combine powdered sugar, Cinnamon Sugar Butter Spread and 1/2 teaspoon vanilla in small bowl. Beat, gradually adding enough half & half for desired glazing consistency. Drizzle over slightly cooled pudding. Serve immediately.

1/4 cup Land O Lakes® Butter
8 slices (4 cups) stale whole wheat bread, cubed
1/2 cup raisins
2 large Land O Lakes® Eggs slightly beaten
2 cups fat free skim milk
1/2 cup sugar
2 teaspoons vanilla
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
Powdered sugar, if desired
Maple syrup or caramel ice cream topping, if desired

Steps:

  • Heat oven to 350°F. 
  • Melt butter in 2-quart ungreased casserole. Add bread cubes and raisins; toss to coat.
  • Beat eggs slightly in bowl. Add milk, sugar, vanilla, nutmeg and salt; mix well. Pour over bread cubes; stir to coat. Bake 45-55 minutes or until knife inserted near center comes out clean.
  • Sprinkle powdered sugar over warm pudding, if desired. Serve with maple syrup or ice cream topping, if desired. Store refrigerated.
