1 lb. ground lamb
1 large egg, lightly beaten
3 cloves garlic, minced
2 tbsp. freshly chopped parsley
2 tsp. freshly chopped oregano
1 tsp. ground cumin
1 tsp. kosher salt
1/2 tsp. freshly ground black pepper
1/4 tsp. crushed red pepper flakes
3 tbsp. extra-virgin olive oil
1 1/2 c. Greek yogurt
1/2 c. mayonnaise
1 1/2 c. basil leaves
1/2 c. parsley leaves
1/4 c. freshly chopped chives
1/4 c. fresh oregano leaves
Juice of 1 lemon
2 cloves garlic
Kosher salt
Freshly ground black pepper

Steps:

  • Preheat oven to 425°. Line a large baking sheet with parchment paper. In a large bowl, combine ground lamb, egg, garlic, parsley, oregano, cumin, salt, pepper, and red pepper flakes. Form into 16 meatballs and place on prepared baking sheets. 
  • Drizzle meatballs with oil and bake until golden and cooked through, 20 minutes. 
  • Meanwhile, make sauce: In a food processor blend together yogurt, mayonnaise, basil, parsley, chives, oregano, lemon juice, and garlic. Season with salt and pepper and adjust with any additional herbs to taste. 
  • Serve meatballs warm with green goddess sauce for dipping.

1 egg, lightly beaten
1/4 cup finely chopped onion
3 minced garlic cloves
1/2 cup breadcrumbs
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon lemon zest
2 tablespoons chopped fresh parsley
1/4 cup plain low-fat yogurt

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, combine all ingredients and mix very well. (Easiest to mix with clean hands).
  • Form by hand into 1 1 1/2 inch balls and place in a baking pan about 2 inches apart.
  • Bake @ 350 for about 25 minutes or until done.
