Kung Pao Chicken Recipe | Bon Appétit image

This Kung Pao chicken recipe was developed to use seasonal peppers with Lisa Cheng Smith of Yun Hai, who imports phenomenal Chinese and Taiwanese pantry staples.

Provided by Chris Morocco

Yield 4 servings

Number Of Ingredients 17

2 tsp. Shaoxing wine, dry sherry, sake, or mirin
2 tsp. soy sauce
1 tsp. cornstarch
1 lb. skinless, boneless chicken thighs or breasts, cut into 1" pieces
2 Tbsp. rice vinegar
1 Tbsp. soy sauce
1½ tsp. sugar
2 Tbsp. vegetable oil, divided
1 bell pepper, cut into bite-size pieces
8–10 red dried chiles (such as chiles de árbol, bird chiles, or frankly any kind; or ½ tsp. crushed red pepper flakes)
2 scallions, chopped
1 Fresno chile, cut into ¼" rings
1 1" piece fresh ginger, peeled, finely chopped
2 garlic cloves, thinly sliced
½ tsp. Sichuan peppercorns or cracked black peppercorns
? cup roasted unsalted peanuts
Kosher salt

Steps:

  • Stir wine, soy sauce, and cornstarch in a small bowl. Add chicken and turn to coat. Let sit at least 10 minutes or up to 30.
  • Stir vinegar, soy sauce, and sugar in a small bowl; set sauce aside.
  • Heat 1 Tbsp. oil in a large nonstick skillet or wok over medium-high. Add chicken (along with any marinade clinging to it) and cook, tossing occasionally, until lightly browned all over but not cooked through, 3–4 minutes. Transfer to a plate.
  • Heat remaining 1 Tbsp. oil over medium-high. Add bell pepper and cook, tossing occasionally, until browned and crisp-tender, about 3 minutes. Add dried chiles, scallions, Fresno chile, ginger, garlic, and peppercorns. Cook, tossing constantly, until very aromatic and dried chiles are lightly toasted, about 1 minute. Add chicken and reserved sauce and cook, tossing, until liquid is nearly evaporated and coats chicken, about 1 minute longer. Toss in peanuts. Taste and season lightly with salt if needed.
  • Divide chicken stir-fry among plates and serve immediately.

4 skinless, boneless chicken breast halves - cut into 1 inch cubes
20 peeled and deveined large shrimp (21 to 30 per pound)
4 teaspoons soy sauce
4 teaspoons rice wine
2 teaspoons sesame oil
1 tablespoon cornstarch
½ cup vegetable oil, divided
4 cloves garlic, minced
16 dried red chile peppers, cut in half
2 teaspoons Szechuan peppercorns
1 red bell pepper, sliced
1 green bell pepper, sliced
¼ cup dark soy sauce
2 tablespoons rice wine
2 teaspoons white sugar
1 cup salted peanuts
4 green onions, cut into 3 inch lengths
2 dashes sesame oil, or to taste

Steps:

  • Combine chicken and shrimp in a mixing bowl along with 4 teaspoons soy sauce, 4 teaspoons rice wine, and 2 teaspoons sesame oil. Sprinkle with cornstarch, and mix until evenly combined. Set aside to marinate for 25 minutes.

  • Heat remaining vegetable oil over high heat. Stir in garlic, and cook for a few seconds until garlic begins to turn brown. Stir in dried chiles and Szechwan peppercorns; cook and stir a few seconds until peppers begin to darken. Add red and green bell peppers, dark soy sauce, 2 tablespoons rice wine, and sugar. Bring to a boil and stir in chicken mixture. Cook until peppers are nearly tender and chicken is no longer pink in the center, about 5 minutes more. Stir in peanuts and green onion until green onion becomes limp. Stir in a few drops of sesame oil to serve.

KUNG PAO CAULIFLOWER RECIPE - NYT COOKING
While kung pao chicken originated in China’s Sichuan Province, it has become an iconic Chinese American dish. The popular stir-fry typically includes chicken, vegetables and peanuts tossed in a dark, salty, sweet and spicy sauce, but in this vegan take, cauliflower steps in for the chicken. Dark soy sauce is more caramel-flavored and less salty than regular soy sauce, and it adds color and richness to the dish. If you don’t have dark soy, substitute with regular soy sauce or hoisin sauce. Make sure you have a lid for your skillet or wok on hand before you start cooking, as covering the cauliflower allows it to cook quicker and more evenly. Toss for 1 minute, then add the Sichuan peppercorns and whole dried chiles, and stir for 1 minute until fragrant. Add the garlic and ginger, and stir for 30 seconds, then add the cauliflower back to the pan. Stir the sauce in the bowl to make sure the cornstarch is well incorporated, then pour it over the cauliflower and toss until the cauliflower is well coated.
