1/2 cup vinegar
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 cup extra-virgin olive oil
1 bunch kale, stems removed and leaves chopped
16 ounces frozen shelled edamame, thawed (soybeans)
1/4 red onion, sliced thin
1 cup shredded carrot
2/3 cup fresh blueberries
1/2 cup dried sweetened cranberries
1/2 cup cashew pieces
1/2 cup shelled roasted sunflower seeds

Steps:

  • . Whisk sugar, vinegar, salt, pepper, and olive oil together in a bowl until sugar is dissolved; set aside.
  • 2. Toss kale, edamame, red onion, carrot, blueberries, dried cranberries, cashew pieces, and sunflower seeds together in a bowl. Pour about half the dressing over the mixture and toss to coat. Cover bowl with plastic wrap and refrigerate 4 to 6 hours. Serve remaining dressing on side.

1/2 cup Cranberry Juice
2 tbsp Lemon Juice
1 package Cherry gelatin (or raspberry)
1/2 cup Walnuts chopped medium fine
2 tbsp sugar For vegan option
1/2 cup freeze dried raspberries or cherries (For vegan option); Pulse in food processor

Steps:

  • " Drain the pineapple and reserve juice. In a pot, blend pineapple juice, cranberry juice and lemon juice together. Bring to a boil and add Jell-O powder, stirring thoroughly! Add the can of cranberry sauce and combine well Transfer to a bowl and set in the fridge for approximately 1.5 hours or until the mixture begins to set. Add walnuts and pineapple. Stir well. Return to the fridge to set. The mixture will not set up as firm as regular gelatin does. Before serving, give mixture a good stir. "
