KOREAN SWEET POTATO CAKE RECIPE - FOOD.COM



Korean Sweet Potato Cake Recipe - Food.com image

A light cake you can find in Korea at Tous Les Jours and other bakeries. I haven't tried this recipe because I don't have an oven here, so try at your own discretion!

1 cup butter, softened
2/3 cup white sugar
2/3 cup brown sugar
3 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup cake flour
1 tablespoon baking powder
1 teaspoon kosher salt
1 1/3 cups milk
1 medium sweet potato, peeled, cubed, boiled, and mashed
1/3 cup maple syrup

Steps:

  • Cream the butter and sugars in an electric mixer until light and fully combined. Add vanilla and eggs, one at a time, incorporating completely after each addition. Let egg and butter mixture blend until very light in color, about 4 minutes on medium/high speed.
  • In a separate bowl add the flours, baking powder, and salt and whisk to combine.
  • In a large measuring cup, measure the milk, add the mashed sweet potato and maple syrup and stir to combine.
  • When the butter mixture is light and fluffy, add 1/3 of the flour mixture and mix well. Add 1/2 of the liquid ingredients and stir. Repeat with remaining flour mixture and liquid mixture, making sure to end with the dry ingredients. Make sure to scrape down the sides of the bowl when giving it a final mix.
  • Pour the batter evenly between two 9 inch round cake pans that you've buttered and floured. Tap the pans lightly on the counter to remove any air bubbles and bake in a 350 degree oven for 40 to 50 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool cakes in their pans for 15 minutes, then turn out on to wire racks to cool completely.

1 (15.25-oz.) pkg. butter pecan cake mix (such as Betty Crocker Super Moist)
¾ cup salted butter, melted (6 oz.), divided
2 large eggs, divided
1 (15-oz.) can sweet potato puree (such as Farmer’s Market Organic)
1 (8-oz.) pkg. cream cheese, softened
½ cup light brown sugar
¼ teaspoon kosher salt
½ cup coarse graham cracker crumbs (from 1 sleeve)
½ cup uncooked quick-cooking oats
½ cup chopped pecans
½ cup white chocolate chips

Steps:

  • Preheat oven to 350°F. Lightly coat a 13- x 9- glass baking dish with cooking spray. Line baking dish with parchment paper, leaving 3 inches of overhang on each side to use as “handles” later. Lightly spray parchment with cooking spray.
  • Stir together cake mix, 1/2 cup of the melted butter, and 1 of the eggs in a medium bowl until a firm but smooth dough is formed (it will be cookie dough consistency). Press mixture in an even layer into bottom of prepared baking dish. Whisk together sweet potato puree, cream cheese, light brown sugar, salt, and remaining egg in a large bowl until smooth. Pour sweet potato mixture over dough mixture. Bake in preheated oven until just set, about 30 minutes.
  • Meanwhile, stir together graham cracker crumbs, oats, pecans, white chocolate chips, and remaining 1/4 cup melted butter in a medium bowl. Sprinkle mixture over baked sweet potato cake. Place back in oven, and bake until nuts and oats are toasted, about 9 minutes. Remove from oven, and let cool to room temperature on a wire rack, about 2 hours. Chill 1 hour, or up to overnight. 
  • Using parchment “handles”, lift cake out of baking dish and place on cutting board. Cut into 20 squares to serve.
