1 (3 pound) whole chicken
¼ cup soy sauce
2 tablespoons sesame seeds
? teaspoon salt
? teaspoon ground black pepper
1 green onion, minced
1 clove garlic, minced
1 teaspoon peanut oil
1 tablespoon white sugar
1 teaspoon monosodium glutamate (MSG)

Steps:

  • Using a sharp knife, remove all chicken meat from bones. Cut into 1/8 inch thick, 2 inch square slices. Put chicken in a medium bowl and add soy sauce.
  • In an iron skillet heat sesame seeds until they begin to swell up and pop. Put the seeds in the bottom of a wooden bowl along with the salt. Using the back of a large spoon, crush the seeds as finely as possible. Add the pepper, onion, garlic, oil, sugar and monosodium glutamate. Mix together. Stir the chicken and soy sauce into this mixture and let stand for 30 minutes.
  • Put chicken mixture in previously used skillet. Cover and cook over low heat until chicken is tender (if it becomes too dry during the cooking time, add a little water).

Here's what you need: chicken wings, cornstarch, oil, sesame seed, cornstarch, flour, salt, water, soy sauce, honey, rice vinegar, gochujang, garlic, ginger

Number Of Ingredients 14

10 chicken wings, or drumettes
1 cup cornstarch
oil, for frying
sesame seed, to serve
½ cup cornstarch
½ cup flour
2 teaspoons salt
1 cup water
2 tablespoons soy sauce
¼ cup honey
2 tablespoons rice vinegar
2 tablespoons gochujang, (Korean chili paste)
2 cloves garlic, minced
1 tablespoon ginger, grated

Steps:

  • Mix the ingredients for the batter in a bowl until smooth with no lumps.
  • Heat oil in a pot to 340°F (170°C).
  • Dip a chicken wing into the cornstarch, shaking off excess, then dredge the wing into the batter, dripping off excess.
  • Fry half of the wings at a time for about 5-7 minutes, until light golden. The oil will drop to about 320°F (160°C).
  • Drain the wings and increase the heat. Heat oil to about 375°F (190°C).
  • Fry the wings a second time until golden brown and crispy. Drain and set aside.
  • In a pan, combine all the ingredients for the sauce and stir until bubbling. Toss in the wings.

  • Make wings: In a deep pot over medium-high heat, heat 4 to 6 cups vegetable oil to 275°. Line a large plate or baking sheet with paper towels. In a small bowl, combine salt, pepper, baking powder, and garlic powder.  Pat wings dry with paper towels, then rub with grated ginger and season with salt mixture. In a large bowl, toss wings with cornstarch and squeeze to compress coating onto each wing. Carefully add wings to oil and fry until skin is just lightly crisped and golden, occasionally flipping with tongs, about 15 to 18 minutes. Remove wings from oil and set aside on prepared plate. Let rest briefly. Heat frying oil to 400°. Return wings to pot and fry again until deeply golden and skin is crisp and crunchy, about 7 to 8 minutes. Remove wings from oil and place in a large mixing bowl. Make sauce: In a medium saucepan over medium-low heat, add butter, dried chilis, ginger, and garlic and cook until fragrant, 2 minutes. Stir in gochujang, ketchup, vinegar, and soy sauce and cook until bubbling. Stir in honey and brown sugar and continue cooking until bubbling and slightly thickened. Pour sauce over wings and toss until evenly coated. Add in peanuts and toss to combine. Garnish with sesame seeds and green onion before serving.
