1 cup Kombucha SCOBY
1 cup Granulated Sugar
1 dash Lemon Juice
1 tablespoon Lemon
1 tablespoon Granulated Sugar

Steps:

  • Rinse the Kombucha SCOBY (1 cup) to remove gunky stringy things.
  • Dice SCOBY with clean scissors or a very sharp knife.
  • Gently combine SCOBY squares, Granulated Sugar (1 cup), and Lemon Juice (1 dash). Bring to a boil over medium heat in a large saucepan.
  • Boil for 7 to 10 minutes, stirring frequently.
  • Remove pot from stove and, with a perforated spoon, remove candies and place them on a parchment paper-lined baking sheet.
  • Allow syrup to cool until slightly thickened, then pour over the candies.
  • Bake at 350 degrees F (180 degrees C) for about 10 minutes. Remove and allow candies to cool. Optionally, sprinkle with a mix of Granulated Sugar (1 tablespoon) and Lemon (1 tablespoon).
