Jun 10, 2021 · Agreed - use a Kolsch yeast for a Kolsch. W34/70 is a favorite of mine but if you want a Kolsch, use the right yeast. The W34/70 and 2 oz of hops will make the beer more of a Helles almost going on to a Pilsner.

HELGA'S COOL KOLSCH - DIY BEER
1. Mix. In a good sized pot (around 8 litres) bring about 500g of Light Dry Malt to the boil with 3 litres of water. Add 25g of the Helga Hops and boil for 10min. Now add the remaining Helga Hops and boil for a further 10min then remove from the heat. Set the pot in a cold/ice water bath to cool then strain into a fermenting vessel.

I've brewed other recipes that had additional specialty malts (1/4 lb Vienna Malt and 1/4 lb Wheat Malt), as well as Tettnanger instead of Perle. I have a feeling the additional malts reminded me of what I tasted in Cologne.
