I wanted to make a kiwi pie a few months ago, and on my first try, I pureed the kiwi and integrated it into the pie mixture itself.

15 whole Graham Crackers (the 4-section Large Pieces)
1/2 c. Macadamia Nuts
1/3 c. Sugar
1/3 c. Butter, Melted
1 can Sweetened, Condensed Milk
2 whole Egg Yolks
1/2 c. Lime Juice
1 tbsp. Lime Zest
6 whole Kiwi, Peeled And Sliced
Sweetened Whipped Cream For Serving
Extra Kiwi Slices, For Serving
Extra Chopped Macadamia Nuts, For Serving

Steps:

  • Preheat oven to 350 degrees. For the crust: Pulse grahams crackers with macadamia nuts and sugar in a food processor until fine. Pulse in the melted butter until crumbs are moist. Press into a pie pan and bake for 5 minutes or until golden and set. Remove from oven and set aside to cool slightly.For the filling: Combine sweetened condensed milk, egg yolks, lime juice, and lime zest in the bowl of an electric mixer and mix on high until smooth and thick, 2 to 3 minutes. Pour mixture into crust and bake for 15 minutes. Remove from oven, allow to cool, then refrigerate for at least 1 hour—more if possible.Arrange kiwi slices on top of the cooled pie, then top generously with whipped cream. Garnish with kiwi slices and chopped macadamia nuts. Keep cold.

Number Of Ingredients 7

1 pie crust
2 cups milk
4 egg yolks
2/3 cup sugar
1/3 cup corn starch
1 vanilla bean
8 kiwis

Steps:

  • Line the pan with the crust, sting it with a fork and put it in the fridge for 30 minutes.
  • Put the milk to boil with the sliced vanilla pod and its seeds. Meanwhile, put the yolks in a bowl with the sugar. Beat it energetically, until the mix gets creamy. Add the corn starch and mix well.
  • Once the milk has boiled, add it gradually to the previous mix. Then put everything back in the pot, and put it back on a medium heat.
  • Stir constantly with a wooden spoon, until the cream thickens, as it is wanted. This lasts around 10 minutes Take out of the heat, then cover directly against the cream with plastic foil. Leave to cool down. Bake the pie crust for 20 minutes at 350°F (180°C)
  • Fill the cold pie crust with the cold cream.
  • Peel the kiwifruits and slice them up. Arrange them nicely on the cream.
  • There you are, your kiwi pie is ready!
