I found this recipe on the web and posted it in response to a request. I have not as yet tried it. The recipe did not specify how much beef soup base to use. I'd suggest starting with enough to flavor the 1 cup of water and maybe a tad more.

1/2 cup sugar
1 cup hot water
beef base

Steps:

  • Be careful while preparing this as it may sputter.
  • Add the sugar to a saucepan and heat on a low or medium-low heat until browned, about 5-10 minutes. When the mixture starts to get dark, take it off the heat and carefully add the water (this may sputter and you don't want to get burned).
  • Add the beef soup base and put back on a low heat, stirring until the water is all mixed inches
  • Cool and store in a disposable container.
  • Use a spoonful or two when making gravies, stews, sauces, meatloavs, meatballs, etc.

This classic brown sauce is one of the five French mother sauces and is used as the base of a number of sauces that are served with meat or poultry, including Bordelaise, Robert, Chasseur, Madeira, Estragon and Diable. The key to sauce espagnole is to slowly cook the roux so it becomes brown without burning. If you’re nervous, you can begin with clarified butter, which has a high smoke point. The classic version is made with homemade veal stock. Beef stock will work, though it will give the final sauce a slightly different flavor. If homemade stock isn’t available, choose the best low- or no-sodium stock you can find. Instead of adding salt to this base sauce, you’ll add it to your final dish since the saltiness of the additional ingredients will vary.

Number Of Ingredients 12

1 stick (8 tablespoons) unsalted butter
1/2 cup all-purpose flour
1 small carrot, chopped
1 stalk celery, chopped
1 small yellow onion, chopped
1 tablespoon tomato paste
1/2 cup dry white wine
8 cups good-quality low- or no-sodium brown stock, such as veal or beef stock
1 teaspoon black peppercorns
4 sprigs fresh flat-leaf parsley
4 sprigs fresh thyme
2 dried bay leaves

Steps:

  • Melt the butter in a large saucepan over medium-low heat. Whisk in the flour to make a smooth paste. Cook, stirring frequently with a wooden spoon and lowering the heat as needed to prevent burning, until the roux is several shades darker than peanut butter, 18 to 20 minutes.
  • Stir in the carrots, celery and onions and cook, stirring occasionally, until the onions begin to soften, about 3 minutes. Stir in the tomato paste, then whisk in the white wine and cook until the mixture thickens, 1 to 2 minutes. Don’t worry if the vegetables get stuck in the whisk; as you add more liquid, they will release and combine with the sauce. Whisk in the stock, 1 cup at a time, and lower the heat to a simmer.
  • To make a bouquet garni, place the peppercorns, parsley, thyme and bay leaves and in a square of cheesecloth and tie it into a bundle with kitchen twine. Submerge the bouquet garni in the sauce.
  • Simmer the sauce, using a spoon to skim off any fat or scum that rises to the surface, until it reduces by half and has the consistency of gravy, 30 to 45 minutes.
  • Remove the bouquet garni, then strain the sauce through a fine-mesh sieve or cheesecloth. Use as desired as a base for sauces.

BEEF AU JUS SAUCE RECIPE - FOOD.COM
I can no longer abide the packet type au jus -- it's just too salty and the taste just seems to be off somehow. We used to spend hours baking trays of beef bones in the restaurant kitchen to make the best au jus, but who has the time (or the bones?) to do that at home? Anyway, I've been messing with alternative au jus recipes for years, to no avail until NOW. When I bake a beef roast, I elevate it above the bottom of my roasting pan/Dutch oven and then I pour in about 3/4 of a cup of water before I season the roast with salt and pepper. I rarely sear my roasts anymore because they are plenty juicy when I use this method, (e.g., 275 degrees F. for 4 1/2 hours for a 2# roast, covered). Anyway, this yields about 1 cup of drippings at the end, which I use to make my au jus. When I find a perfectly marbled roast, with not too much fat around the outside edges, I find that the drippings are excellent for this recipe because there is just enough fat in the drippings to add a good amount of flavor. In the end, you can use this au jus for anything up to, and including, prime rib -- it's just great. The key ingredients, I think, are the Mrs. Dash, garlic and herb blend, (something I just started using recently), in combination with the Kitchen Bouquet. A small amount of the latter goes a LONG way! I hope you enjoy the ease of preparation and the great flavor of this au jus as much as my own family does!
