King's Hawaiian Bread Pudding Recipe - The Daily Meal image

Noreetuh, a modern Hawaiian restaurant in New York City's East Village, serves a bread pudding for dessert made with the cult-favorite King's Hawaiian Sweet Rolls. This makes the bread pudding sweet and fluffy without being too dense or mushy. You can make the big batch of bread pudding ahead of time, and then quickly heat up each individual slice as you need them. It's the perfect dessert to make for a large dinner party. Serve with ice cream and garnish with extra golden raisins.

30 ounce king's hawaiian sweet bread, cubed into 1/2-1 inch pieces
2 cup whole milk
4 cup half & half
8 ounce butter
1 cup granulated sugar
10 large eggs
1 1/2 teaspoon vanilla extract
1 1/12 teaspoon cinnamon powder
1/4 teaspoon grated nutmeg
1 cup golden raisins

Steps:

  • Spray a deep half hotel pan (or any 10x12 inch pan, 4 inches high) with non-stick baking spray, and line with parchment paper. Set aside.
  • Cube bread and set aside in a large mixing bowl.
  • In a medium pot, warm all dairy, sugar and milk. Butter should be melted and sugar dissolved. Do not let this boil. Set aside.
  • In an electric blender, add all eggs and spices. While the blender is on low speed, stream in the scalded milk and butter mixture. If your blender isn't big enough to hold all liquid, blend in batches or hand mix in a large bowl after the eggs are fully blended.
  • Pour liquid mixture into the bowl with the cubed bread along with half of the raisins. Mix well with a large spoon or spatula, and let this mixture sit for about 30 minutes to allow the bread to soak up the liquid.
  • Pour bread mixture into the lined hotel pan. Sprinkle the remaining raisins on top, pushing them into the mixture if necessary. If you have a steamer, wrap the entire pan with plastic wrap or cling film, going around the entire pan once (cater wrap), and folding in the sides. If you have a regular oven, wrap in foil.
  • Place pan in a steamer at 250° F, for 1 hour. Lower oven steamer to 212° F, and steam for another 30 minutes. Or bake at 300° F for 1 hour.
  • Test with a pick or cake tester to make sure it comes out clean.
  • Once bread pudding is done baking/steaming, remove from oven and remove wrap or foil. Place in refrigerator to cool completely, about 4 hours, or overnight, before using.
  • To remove pudding from pan, score the sides of the pudding with a small metal spatula or knife, making sure to keep the knife as close to the side of the hotel pan as possible. Turn entire pan upside down and warm entire base and side surface with a brulee or plumbing torch, sweeping side to side to warm the pan. It should come out once the pan is warm. Portion to desired size. Can be enjoyed cold or heated up with 1 tablespoon of butter in medium pan on the stovetop and/or by warming it in the oven.

As far as homemade bread goes, this is fairly easy to make. The results are unlike any other bread we've made. It is sweet and rich in flavor. If you make rolls, they're buttery, light, and fluffy. A loaf will make the perfect grilled cheese or french toast. We could not stop snacking on this.

6 cup(s) all-purpose flour, divided in half; plus an additional 1/2 cup flour
3 large eggs
2 cup(s) pineapple juice, room temperature
3/4 cup(s) sugar or Splenda
1 teaspoon(s) vanilla extract
2 package(s) yeast (.25 oz each)
1/2 cup(s) butter, melted (8 Tbsp)

Steps:

  • In a small bowl beat your eggs.
  • Add the pineapple juice, sugar, vanilla extract, and melted butter. Mix well.
  • Put 3 cups of flour into a large bowl.
  • Stir in your egg mixture until well combined.
  • Sprinkle in the yeast packets, one at a time, mixing well.
  • Add the remaining 3 cups of flour and mix well. If it becomes to difficult to stir with a wooden spoon, just use your hands! Make sure all of the flour is well incorporated.
  • The dough should be tacky to the touch but not overly sticky. If it appears too wet, sprinkle in a bit of extra flour. Just a tablespoon or so at a time.
  • Cover your bowl with a clean kitchen towel. Set it in a warm place to rise for 1 hour.
  • Remove your dough from the bowl and knead in an additional 1/2 cup of flour. I kneaded mine 10 to 15 times, making sure the flour was well incorporated.
  • Form the dough into rolls or loaf and place in buttered pans.
  • Cover and place in a warm place to rise until the dough doubles in size. If making rolls, let rise for 1 hour. For loaves, let rise for 90 minutes.
  • Bake at 350 degrees for 25 to 30 minutes or until golden brown.
  • Brush tops with melted butter. Serve warm.

Turn onto a lightly floured surface; divide into thirds. Shape each into a ball. Place in 3 greased 9-in. round baking pans lined with parchment. Cover and let rise until doubled, about 45 minutes.
    Preheat oven to 350°. Bake until golden brown and internal temperature of loaves reaches 200°, 30-35 minutes, covering loosely with foil during the last 10 minutes of baking if needed to prevent tops from overbrowning. Remove from pans to wire racks to cool.
