CARIBBEAN PAN FRIED KING FISH RECIPE – WE TRINI FOOD



Caribbean Pan Fried King Fish Recipe – We Trini Food image

This pan fried king fish is tasty and full of flavor from chadon beni, garlic, and turmeric. Enjoy it as a seafood side option for lunch.

Number Of Ingredients 8

4 king fish fillets
4 tbsp flour ((2 tbsp to wash the raw fish; 2 tbsp for batter before frying))
2 tbsp lime juice
1½ tsp salt
1½ tbsp Caribbean green seasoning ((with garlic, chadon beni, ginger))
½ tsp turmeric powder
½ tsp pepper ((optional))
¼ cup oil for frying

Steps:

  • Defrost fillets if frozen.
  • Scrape off any blood spots in the bone. Rinse.
  • Rub flour and lime juice into the fillets.
  • Rinse the fillets.
  • Rub in green seasoning, salt, turmeric and pepper.
  • Cover and refrigerate for 15 minutes to marinate (optional).
  • Rub flour onto the fillets (optional).
  • Place a small pot on medium heat.
  • Add oil and allow to heat up.
  • Place the fillets in the hot oil.
  • Leave to fry for 4 to 5 minutes.
  • Flip over.
  • Fry for another 4 to 5 minutes.
  • Remove from oil.
  • Serve hot.

1 cup Unsweetened Coconut Cream
3 Lime
2 Lemon
1 Jalapeño Pepper
1/2 Red Onion
1/4 Long Dutch Chili Pepper
1/2 inch Fresh Ginger
1 clove Garlic
to taste Salt
0.5 pound King Fish
1 Sweet Potato
4 piece Fresh Cilantro
to taste Coconut Shavings

Steps:

  • Squeeze the juice of the Lime (3) and Lemon (2).
  • Dice the Jalapeño Pepper (1) and Long Dutch Chili Pepper (1/4).
  • Mince the Fresh Ginger (1/2 inch) and Garlic (1 clove).
  • Thinly slice half of the Red Onion (1/2) and dice the other half. Set aside. Thinly slice the Fresh Cilantro (4 piece).
  • Mix the Unsweetened Coconut Cream (1 cup) with the limes and lemons juice, diced jalapeno, diced red onion, Dutch chili, minced ginger, garlic and Salt (to taste). Chill for 30 minutes.
  • Peel the Sweet Potato (1) and dice. Blanch the diced sweet potato in boiling water until cooked but firm, place them in iced cold water to stop the cooking, remove from the water and reserve.
  • Dice the King Fish (0.5 pound).
  • Add the diced king fish to the coconut marinade, enough to cover the fish. Leave to marinate for a couple of minutes.
  • Place the cooked sweet potatoes in a serving bowl.
  • Spoon the fish making sure that it's covered with the coconut marinade. Top it with the sliced red onion and baby coriander. Finish with the Coconut Shavings (to taste) and enjoy!
