Homemade Kinder Bueno Filling - Easy - oneHOWTO image

Kinder Bueno is a delightful chocolate and hazelnut snack which is marketed at kids (kinder is German for children), but is enjoyed by adults in equal measure. Part of this reason is its light chocolate wafer shell, not too cloying for an adult palate. Once you break into that shell, you are rewarded with a creamy hazelnut filling which is sweet, but still fluffy enough to not make you wince at the calories. This oneHOWTO copycat version of homemade Kinder Bueno filling is easy to make (much easier than scooping out individual Kinder Bueno pieces with a tiny spoon) and can be used in a range of different desserts.

1 Cup toasted hazelnuts
8 Ounces white chocolate
1 Cup granulated sugar
1 Cup vegetable oil
1 Cup milk
2 Dessert spoons cornstarch
1 Pinch salt
1 Dessert spoon vanilla extract

Steps:

  • We'll start our homemade Kinder Bueno filling by arranging the ingredients. You could make an alternate version with milk or dark chocolate, but it won't be like the kinder original. Besides, we already have lots of other chocolate recipes to choose from like some delicious chunky Australian rocky road.
  • You will need a blender or food processor for this recipe, trying to finely chop or mash by hand will be very difficult. Put the hazelnuts and the sugar in the processor and process for a few minutes until you get a creamy paste, similar to how you would make a homemade peanut butter.
  • Continue our homemade Kinder Bueno filling by adding the cornstarch, vanilla essence and salt. Slowly process on a low setting and add the oil little by little.
  • Once you have an even consistency, add the white chocolate and pour the milk in the same way you added the oil.
  • Keep processing until you get a thick creamy paste, just as you would have with the filling for a real Kinder Bueno.
  • Once your homemade Kinder Bueno filling is ready, you can use it to fill pretty much whatever you like. Number Of Ingredients 13

1 Cup Butter, Cold and in small chunks ((220g))
3/4 Cup Brown Sugar ((150g))
1/2 Cup Sugar ((100g))
2 Large Eggs
1 Tbsp. Vanilla Extract
3 and 1/2 Cups All Purpose Flour ((420g))
1 Tbsp. Cornflour (Cornstarch)
1 tsp Baking Powder
1 Cup Chocolate Chips ((180g))
129 g Kinder Bueno, Chopped into small pieces ((3x Kinder Bueno Bars))
140 g Kinder Chocolate, Chopped into pieces
43 g Kinder Buneo ((1x Kinder Bueno Bar))
60 g Kinder Chocolate, Chopped into smaller pieces

Steps:

  • Preheat the oven to 180°C (350°F) and line two baking trays with baking paper.
  • With an electric mixer, beat the cold butter with the brown sugar and sugar creaming them together.
  • There should still be clumps of butter visible.
  • Add the eggs and vanilla extract and beat in. Again, there should still be chunks of butter visible.
  • In a separate bowl, mix the flour, cornflour and baking powder together.
  • Add the flour mixture to the wet ingredients. The batter will be quite stiff.
  • Chop up the Kinder Bueno and Kinder chocolate and add that and the chocolate chips and stir in.
  • Divide the mixture into around 10-12 large balls and arrange on the prepared pan. Only four or five to a tray as they will spread.
  • I didn't roll mine, more like clumped them together in a rustic look. You want them tall balls rather than flatter balls as this will help them remain thick.
  • Chill the dough for 30 minutes – 1 hour to re chill the butter and avoid spreading.
  • Bake for around 15-20 minutes. The dough will still be a little soft to the touch.
  • It's at this moment you can choose to top each cookie with extra pieces of Kinder Buneo or Kinder Chocolate so that they melt into the tops of each cookie.

  • "Roast your hazelnuts in the oven. Scatter them in a baking tray that is lined and make sure they are not piled on top of each other. Bake for 15 minutes or until lightly browned in an oven pre-heated to 160fan/180c. Remove from the oven and allow to cool. * Whilst the nuts are cooling melt the chocolate on a bain marie or in a microwave safe bowl using 30 second blasts until fully melted. Again leave to cool to room temperature. With the nuts cooled place into a high powered food processor and blend well. You really want to get a smooth paste like texture, so whizz it up and shake a good couple of times, this will help get a smooth finish.   • Preheat your oven to 180°C (160°C fan). Grease and line two 20cm round springform cake tins. Heat the butter, chocolate, caster sugar and milk in a medium saucepan over a medium-low heat, stirring regularly, until melted and smooth, 5-6 minutes. Set aside to cool slightly then transfer to a large mixing bowl.  Add the beaten eggs and sour cream and mix together. Then stir through the flour, baking powder and cocoa powder, along with a pinch of salt. Mix together until well combined.  Divide the mixture between lined cake tins and bake for 30-35 minutes, until risen. Insert a skewer into the middle to see if it comes out clean (this is a good way of checking the cake's cooked). Once cooked, leave to cool completely in the tins. To make the frosting, place all the ingredients into a large mixing bowl with a pinch of salt and beat with a handheld electric mixer or freestanding mixer, until well combined and fluffy, 4-5 minutes. Once the cakes are cool, lay one on a cake board. Spread about 1/4 of the frosting on top of the cake, then top with crumbled wafers. Top this with the remaining cake then spread another 1/4 of the frosting on top.  Using a palette knife, spread the remaining frosting sparingly around the sides so that there is a thin layer of frosting just enough so that you can still see the cake underneath.  Use the palette knife to neaten up any edges. Chill in the fridge to allow the buttercream to firm up, about 30 minutes. Once chilled, melt the chocolate and cream in a heatproof bowl set over a pan of barely simmering water.  Transfer this to a piping bag, snip a small hole and pipe small amounts of the chocolate mixture around the edges of the cake, allowing drips to run down the side as you like.  Pipe the remaining chocolate all over the top and smooth using a palette knife so that the top is completely covered in chocolate.  Chill for a further 30 minutes then top with the Kinder Buenos before serving.
