KIMCHI FRIED RICE RECIPE | COOKING LIGHT

Chopped kimchi goes into the rice for a little crunch and a lot of flavor, and kimchi juice finishes the dish for a jolt of tangy-spicy goodness. It's a quick meatless main dish that only needs a side of broccoli or a simple side salad to round out the meal. You can also add sautéed shrimp, ham, or chicken if you'd like a heartier entrée. Or, if you're strictly vegetarian, be sure to choose kimchi without shrimp or fish added. For extra heat, serve with Sriracha.

Yield Serves 4 (serving size: 1 1/2 cups)

Number Of Ingredients 11

1 1/2 teaspoons toasted sesame oil
2 lightly beaten large eggs
1 1/2 tablespoons toasted sesame oil
1 cup chopped green onions
4 minced garlic cloves
3/4 cup chopped kimchi
2 (8.8-oz.) pouches precooked brown rice (such as Uncle Ben's)
8 ounces fresh spinach
1/2 cup thawed frozen green peas
1/4 cup kimchi juice
2 tablespoons reduced-sodium soy sauce

Steps:

  • Heat toasted sesame oil in a large nonstick skillet over medium-high. Add lightly beaten large eggs; cook 30 seconds or until scrambled, stirring constantly. Remove from pan. Heat toasted sesame oil in pan. Add chopped green onions and minced garlic cloves; sauté 1 minute. Add chopped kimchi and precooked brown rice; sauté 4 minutes. Gradually add fresh spinach, stirring until spinach wilts. Stir in thawed frozen green peas, kimchi juice, reduced-sodium soy sauce, and eggs.

Rach shares an Asian dinner of kimchi fried rice and beef, mushroom, scallion + chile stir fry that's better than takeout!

Number Of Ingredients 46

1 ½ cups jasmine rice
white rice or brown rice
made to package directions in stock rather than water
3 tablespoons canola oil
2 tablespoons light soy sauce or tamari
2 tablespoons butter
1 carrot
matchsticks or julienne (1 cup)
1 small onion
chopped or quartered and thinly sliced
1 ½ inches ginger root
thinly sliced and chopped
3-4 cloves garlic
chopped
A small bundle of kale or chard
stemmed and shredded
1 cup kimchi
chopped
plus 2 tablespoons brine (Rach likes Mother-in-Law's kimchi)
3 tablespoons gochujang ketchup or 2 tablespoons gochujang paste
1 tablespoon sesame oil
2-4 eggs
Nori sheets
scallions or chives
to top
2 tablespoons EACH: Worcestershire
rice vinegar
light soy
dark soy and light brown sugar
1 tablespoon coarse black pepper
1 tablespoon sesame oil
5-6 cloves garlic
crushed
1 ½ pounds flanken (thin cross-cut) short ribs
High-temp cooking oil spray or cooking oil
as needed
¾ pound sliced mushrooms or mixed mushrooms
such as crimini
shitake and maitake
1 large bunch scallions
cut into 1-inch lengths
2 red finger/Hungarian chiles
thinly sliced on bias
A few green chiles or handful of shishito
chopped
Toasted sesame seeds

Steps:

  • For the fried rice, prepare the rice to cool while you marinate the meat (see below), including up to the night before you want to serve the meal
  • Cook rice and spread onto parchment-lined baking sheet to cool completely
  • For make ahead, chill overnight in plastic baggie
  • Heat oil in large nonstick pan over high heat and crisp rice, season with soy sauce or tamari and remove to a baking sheet
  • Reduce heat a bit and add butter (or 1 tablespoon more oil) and cook carrots with onions to soften
  • Add the ginger and garlic and wilt in greens
  • Add kimchi, gochujang ketchup or paste and sesame oil, add back the crispy rice and combine
  • Top with soft fried egg or make small omelets, then roll and chop or shred and add to rice
  • Garnish with nori, scallions or chives and serve
  • For the marinade, whisk up ingredients, add to double-lined plastic food storage bag with the flanken ribs and refrigerate 8 hours or overnight
  • Listicle: Rachael Ray 12-Inch Cast Iron Frying Pan To prepare the flanken ribs, heat a large cast-iron skillet over medium-high heat
  • Coat pan with high-temp oil, shake off excess marinade and cook flanken 4 minutes, then turn and cook 3 to 4 minutes more
  • Remove to platter, add more oil to coat pan and brown mushrooms and scallions
  • Add chiles and toss 2 minutes more, then top the ribs with veggies and sesame seeds
