CLASSIC SWEET AND SOUR CHICKEN - KIKKOMAN RECIPES



Classic Sweet and Sour Chicken - Kikkoman Recipes image

2tbsp oil
4 skinless chicken breasts, cut into chunks
1 onion, sliced
2 cloves garlic, crushed
1 red pepper, sliced
1 yellow pepper, sliced
100g baby sweetcorn, halved
2tbsp tomato ketchup
2tbsp Kikkoman Soy Sauce
2tbsp white wine vinegar
2tbsp sugar
2tbsp cornflour
2cm piece fresh ginger, grated
227g can pineapple chunks in juice, drained and juice reserved
1tbsp tomato puree (optional)
300g rice or noodles, cooked according to pack instructions, to serve

Steps:

  • Heat the oil in a large frying pan or wok. Add the chicken and cook until browned on both sides. Add the onion, and garlic and fry for a couple of minutes, stirring well. Throw in the peppers, baby sweetcorn and stirfry for 3-4mins until softened. Make the sauce by mixing the ketchup, Kikkoman Soy Sauce, white wine vinegar, sugar and cornflour in a small bowl. Add the ginger and drained pineapple chunks to the pan, then stir in the sweet and sour sauce.  Make up the pineapple juice to approx. 300ml with either a little water or stock and add to the pan. Cover and simmer for 10mins, stirring occasionally. If the colour is a little pale, add the tomato puree for a richer sauce. Serve with rice or noodles. For super succulent chicken, why not try ‘velveting’ the chicken before cooking. This is an authentic Chinese cooking technique, used to prevent overcooking and give a smooth moist texture to the meat. Before cooking the chicken, toss it in a mixture made from 1tbsp cornflour and 1 egg white. Leave it to marinate for 30mins in the fridge. When ready to cook, heat 2-3cm oil in a pan and quickly fry the chicken for about 30seconds, until it turns white. Lift it out of the oil, drain on a plate, then add to the recipe after the onions and garlic, stirring well and allowing it to cook through. This is so quick and easy to make, vary the vegetables and meat depending on what’s in the fridge, and the sweet and sour sauce comes together in seconds. Better than the take away!

500 g Roma tomatoes
1 pc Yellow roma tomato, big
1/2 pc Sweet onion
3 cloves Garlic
50 ml Kikkoman Naturally Brewed Less Salt Soy Sauce
1/2 tspTABASCO® Pepper Sauce
1 tbsp Apple vinegar
3 tsp Honey
1 tbsp Kikkoman Teriyaki Marinade
1/2 tbsp Dried basil
2 tsp Freshly ground black pepper

Steps:

  • Clean vegetables, remove stems. Chop tomatoes into quarters, stir fry 30 minutes until water evaporates. Filter through sieve. Peel yellow tomato, chop into small cubes. Chop garlic and onion very finely and add to tomato sauce along with yellow tomato. Cook on low heat and stir occasionally. Add all spices and cook 2-3 minutes. You can blend it until smooth or leave it with pieces of vegetables. Pour the sauce into clean, dry glasses, cover with seals and lids and put to preheated oven. Bake in max. 120°C for about 30 minutes. Allow cooling down overnight; don’t turn up-side-down. Sauce is perfect base for sauces for rice, noodles and other grains – with addition of other vegetables and meat or fish.

  • "Wash and trim chicken, then cut into large bite size chunks. The meat will shrink during cooking so don't make the chunks too small. Somewhere around an inch to inch and a half is often good. Heat olive oil in a large skillet with cover. Deep skillets are easiest to work with. Blend cornstarch and soy sauce in small bowl, keep adding soy sauce until you have thick soupy consistency, dump in the chicken and mix until all the chicken is well coated. Once the skillet is hot, remove the chicken out of the cornstarch mix and brown on each side. Stir in roughly around 1/2 cup water. Cover and simmer 20 minutes, stirring occasionally.   • Cook the spare ribs in a pan of boiling salted water for approx. 50–70 minutes, depending on the thickness of the ribs. Drain and allow to cool a little.  Prepare the marinade by washing the lemon under hot water, then patting it dry. Grate off some of the zest, cut the lemon in half and squeeze out the juice. Peel the ginger and garlic and chop both finely. Mix together the lemon zest and juice, soy sauce, olive oil, sesame oil, honey, vinegar, ginger, garlic, pepper and sesame seeds. Brush the spare ribs with the marinade and put in the fridge for around 2 or 3 hours until you’re ready to start the barbecue. Meanwhile, prepare the salad by peeling the mango and cutting the flesh off the stone. Slice the mango flesh into thin strips. Slice the lettuce, then wash and dry. Wash and peel the carrots, then shave off thin ribbons using a peeler. Wash the sprouted seeds, if necessary. To prepare the dressing, use a blender to blend 4 tablespoons of sliced mango, the olive oil, vinegar, apple juice, soy sauce and maple syrup together. Season with pepper. Add the dressing to the salad and toss.  Place the spare ribs on the barbecue for about 10-20 minutes depending on the heat (closing the lid, if your barbecue has one). If needed, baste with the remaining marinade as the ribs cook. Serve alongside the salad. Tip: Pre-cooking the ribs in salted water significantly reduces the time they need on the barbecue and keeps them succulent and full of flavour. The marinade also tastes fantastic on beef steaks and pork chops. To bring out the full flavour of the marinade, leave the spare ribs to marinate overnight.
