KFC ORIGINAL RECIPE FRIED CHICKEN - TOP SECRET RECIPES
One of the most protected, discussed, and sought-after secret recipes in the food world is KFC's Original Recipe Fried Chicken. Long ago I published my first hack of the famous formula, but the recipe, which was based on research from "Big Secrets" author William Poundstone, includes only salt, pepper, MSG, and flour in the breading, and not the blend of eleven herbs and spices we have all heard about. The fried chicken made with my first recipe is good in a pinch, but it really needs several more ingredients to be a true clone. That is why, over twenty years later, I was happy to get another crack at the secret when we shot the pilot episode for my CMT TV series Top Secret Recipe. In the show, I visited KFC headquarters, talked to friends of Harlan Sanders who had seen the actual recipe, and even checked out the Corbin, Kentucky, kitchen where Harland Sanders first developed his chicken recipe. During that four-day shoot I was able to gather enough clues about the secret eleven herbs and spices to craft this new recipe—one that I believe is the closest match to the Colonel's secret fried chicken that anyone has ever revealed. Steps:
- Chop up your whole chickens into drumsticks, thighs, wings, and breasts. Put to one side.
- Create your production line. Crack eggs into a bowl and mix with a fork. Place flour in a bowl and season well with chicken seasoning, salt, and pepper. Place breadcrumbs into a bowl and mix with half your KFC rub.
- Toss the chicken in half your KFC rub. Then load chicken into the flour mixture, then into the egg, and then into the breadcrumbs bowl. Make sure each piece of chicken is well coated from each bowl.
- Place the KFC chicken into the air fryer basket on a single layer.
- Cook for 12 minutes at 180c/360f. Then turn and cook for a further 4 minutes at the same temperature. If doing a big batch doing in lots making sure you on don’t over fill the air fryer.
- Serve warm in your old KFC bucket.

- Prepare the Chicken: Trim the chicken and remove any excess fat. Dip each piece of chicken into the buttermilk mixture and then toss to coat in the breading mixture until very well coated. Set aside and allow the chicken to rest for a minute or 2 in the breading mix for the coating to set up. Vigorously shake off any excess breading mix and arrange it onto a roasting rack fitted inside a rimmed baking sheet. Excess flour will not brown without a generous coating of cooking spray oilAfter all the chicken is coated, spray each piece generously with aerosol oil or non-fat cooking spray. This helps the coating brown evenly and crisp up in the oven. (Even a generous coat of aerosol oil is still much less oil than deep-frying). Bake for about 45 minutes or until the chicken is well browned, the internal temperature is 165 degrees F and the juices run clear.
