1 small zucchini, shredded
3/4 teaspoon salt, divided
2 pounds ground pork (alternatively, use turkey, beef, or a mix)
2 large Pete and Gerry’s Organic Eggs
1/2 cup (50 grams) blanched almond flour
1/4 cup fresh cilantro, chopped
2 tablespoons fish sauce
2 large jalapeños, finely minced
2 cloves garlic, minced
2 green onions, sliced
1 teaspoon ginger, grated
1 teaspoon lime zest, grated
2 tablespoons coconut aminos (or tamari)
2 tablespoons fresh lime juice
1 tablespoon fish sauce
1/2 teaspoon chili garlic paste

Steps:

  • Set the zucchini in a sieve in the sink or over a large bowl. Sprinkle with 1/4 teaspoon of the salt and let drain one hour, then press down to squeeze out as much moisture as possible.
  • Preheat oven to 375F and line a large rimmed baking sheet with foil.
  • In a large bowl, combine all meatball ingredients (including the remaining salt) and mix well by hand. Form into 1 1/2 inch balls (you should get about 36).
  • Place meatballs on the prepared baking sheet and bake 15 to 20 minutes, until the internal temperature reaches 165F.
  • Whisk all the sauce ingredients in a small bowl. Drizzle over the meatballs or serve as a dipping sauce.

1 lb ground beef (85/15)
1/3 cup crushed pork rinds
1/4 cup scallions, chopped
2 cloves garlic, minced
2 tbsp coconut aminos/soy sauce
1 tbsp cilantro, finely chopped
2 tsp fish sauce (optional)
1/2 tsp Sriracha Sauce
1 tsp ground ginger
1 tsp pink himalayan salt
1/2 tsp black pepper

Steps:

  • Preheat your air fryer at 350 for 2-3 minutes.
  • Combine all ingredients in a large bowl and mix thoroughly using your hands.
  • Form the meat into 16 1.5-inch balls and set on a plate.
  • Add meatballs to air fryer basket, making sure they don't touch or over crowd the basket (work in batches if needed.)
  • Cook in air fryer for 10-12 minutes at 350 degrees.
  • Remove from the air fryer and serve immediately.

Add meatballs and cook, turning occasionally, until golden on all sides, about 10 minutes. Remove from skillet and place on a paper towel-lined plate.  To the same skillet, add onion and cook until soft, 5 minutes. Add garlic and cook until fragrant, 1 minute more. Add tomatoes and oregano and season with salt and pepper.  Add meatballs back to skillet, cover and simmer until sauce has thickened, 15 minutes. Garnish with Parmesan before serving.
