Buffalo Ranch Keto Chicken Tenders

2 pounds chicken breast
kosher salt
2 cups almond flour
2 tablespoons Hidden Valley® Original Ranch® Salad Dressing and Seasoning Mix Shaker
2 eggs
1 cup Buffalo sauce

Steps:

  • Preheat oven to 350°F. Lightly grease a baking sheet. Season the chicken tenders lightly with salt and pepper.
  • Mix the almond flour with the ranch seasoning and spread onto a plate or shallow bowl. Season the eggs with salt and pepper and place into another shallow bowl. Dip each tender into the egg wash and shake off excess; then press into the seasoned almond flour, making sure the tenders are coated on all sides.
  • Bake the tenders for 30 minutes, broiling in the last 2–3 minutes to get them crisper. Cool for 5 minutes.
  • Gently place the tenders into a bag or, drizzle with buffalo sauce, and shake very gently to coat. Serve immediately.

1 cup crushed pork rinds
½ cup grated Parmesan cheese
2 teaspoons Italian seasoning
1 teaspoon sea salt
1 teaspoon dried thyme
1 teaspoon dried basil
½ cup melted butter
3 skinless, boneless chicken breasts

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Mix pork rinds, Parmesan cheese, Italian seasoning, sea salt, thyme, and basil together in a large bowl. Place melted butter in a separate bowl.
  • Cut each chicken breast into 3/4-inch thick strips - about 5 strips per breast. Dip each strip into melted butter and coat with pork rind breading. Place coated chicken strips on the prepared baking sheet.
  • Bake in the preheated oven until chicken is no longer pink inside, about 20 minutes.
