KETO BREAKFAST BURRITO – RECIPE CHAMPIONS

Yield 2 burritos

Number Of Ingredients 6

3 cups shredded mozzarella cheese
1/2 cup or 8 oz of cooked ground sausage
6 strips cooked bacon
4 eggs
1/2 cup shredded cheddar cheese
1 tbsp chopped chives

Steps:

  • Heat a large non stick frying pan to medium heat. Add half the shredded mozzarella and spread evenly so the cheese is covering the entire surface.
  • Continue to fry until the edges of the cheese start to crips and the cheese is easily removable from the pan. Place on a piece of parchment and set aside.
  • Combine the shredded cheddar cheese with the eggs and chives and whisk. Add ½ teaspoon of salt and pepper.
  • Add 1 tablespoon of butter to a medium pan. When the butter is melted, add the egg and cheese mixture to the pan and cook periodically mixing the contents of the pan. Set eggs aside.
  • Add half the sausage to the center of the cheese blanket. Add half the eggs on top of the sausage followed by the bacon.
  • Fold each side of the cheese inward. Roll the burrito with the opposite side creating a pocket. Enjoy your Keto creation!
