Kentucky Grilled Chicken Recipe: How to Make It image

This Kentucky grilled chicken is perfect for an outdoor summer meal, and my family thinks it's fantastic. It takes about an hour on the grill but is worth the wait. I use a new paintbrush to mop on the basting sauce. -Jill Evely, Wilmore, Kentucky

Number Of Ingredients 6

1 cup cider vinegar
1/2 cup canola oil
5 teaspoons Worcestershire sauce
4 teaspoons hot pepper sauce
2 teaspoons salt
10 bone-in chicken breast halves (10 ounces each)

Steps:

  • In a bowl or shallow dish, combine the first 5 ingredients. Pour 1 cup marinade into a separate bowl; add chicken and turn to coat. Cover and refrigerate for at least 4 hours. Cover and refrigerate the remaining marinade for basting., Drain and discard marinade from chicken. Prepare grill for indirect heat, using a drip pan. , Place chicken breasts, bone side down, on oiled rack. Grill, covered, over indirect medium heat until a thermometer reads 170°, about 20 minutes on each side, basting occasionally with reserved marinade.

Hot Brown Turkey Casserole Recipe: How to Make It image

If you've ever tried the Hot Brown Sandwich at the Brown Hotel in Louisville, Kentucky, you'll love this version. It can be assembled ahead and refrigerated; just adjust baking time accordingly if cold. —Diane Halferty, Corpus Christi, Texas

Number Of Ingredients 13

1/4 cup butter
1/4 cup all-purpose flour
4 cups 2% milk
1 large egg
3/4 cup grated Parmesan cheese, divided
1/4 teaspoon salt
1/4 teaspoon pepper
12 slices bread, toasted and divided
2 pounds thinly sliced cooked turkey or chicken
1/4 teaspoon paprika
6 bacon strips, cooked and crumbled
1 cup tomatoes, chopped and seeded
1 teaspoon minced fresh parsley

Steps:

  • Preheat oven to 350°. In a large saucepan, melt butter over medium heat. Stir in flour until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook until slightly thickened, 6-8 minutes. Remove from heat., In a small bowl, lightly beat egg. Gradually whisk in 1/2 cup sauce. Slowly return all to the pan, whisking constantly. Add 1/2 cup Parmesan cheese, salt and pepper. Cook and stir until thickened. (Do not allow to boil.), In a greased 13x9-in. baking dish, layer 6 toast slices and turkey; pour sauce over top. Sprinkle with paprika, bacon and remaining 1/4 cup Parmesan cheese., Bake until heated through, 20-25 minutes. Top with tomatoes and parsley. Cut remaining toast slices in half diagonally; serve on the side.

Sprinkle baking powder over the cornmeal mixture, then stir it in with the butter. In a small bowl, beat egg yolks; stir in a small amount of hot cornmeal mixture. Return all to the pan and mix well. , In a small bowl, beat egg whites until stiff peaks form. Fold a fourth of the egg whites into the cornmeal mixture. Fold in remaining egg whites until blended. , Transfer to a greased 2-1/2-qt. baking dish. Bake, uncovered, at 350° for 40-45 minutes or until puffed and golden brown. Serve immediately.

For the chicken pieces, make sure that they are not too big: whole drumstick, whole thigh, but the breast part should be chopped into two. Its also helpful to use the fryer cover-it helps the meat cook through properly.
