2 egg whites, at room temperature
1/4 teaspoon cream of tartar
1/4 teaspoon salt
1/4 cup sugar
3/4 cup light Karo syrup
1 1/2 teaspoons vanilla

Steps:

  • In a small bowl, beat egg whites, cream of tartar and salt at high speed until soft peaks form.
  • Gradually beat in sugar until smooth and glossy.
  • Gradually beat in corn syrup and vanilla until stiff peaks form.
  • If desired, beat in food coloring of your choice. Makes enough frosting for 9-inch layer cake or 9 x 13-inch cake.

1 cup Karo light or dark corn syrup
3 eggs
1 cup sugar
2 tablespoons butter, melted
1 teaspoon Spice Islands Pure Vanilla Extract
1 1/2 cups pecans
1 (9-inch) unbaked or frozen deep-dish pie crust

Steps:

  • Preheat oven to 350°F.
  • In a mixing bowl, mix corn syrup, eggs, sugar, butter, and vanilla using a spoon. Stir in pecans. Pour filling into pie crust.
  • Bake on center rack of oven until center reaches 200°F and springs back when tapped lightly, about 55 to 70 minutes.
