This is a recipe that I've used for years. It's so quick and easy for a week night meal and has such wonderful flavor.

Number Of Ingredients 12

1 lb boneless skinless chicken breast, cut into 1 inch pieces
1 tablespoon cornstarch
2 teaspoons light sesame oil or 2 teaspoons vegetable oil
3 tablespoons green onions, chopped with tops
2 garlic cloves, minced
1/4-1 1/2 teaspoon crushed red pepper flakes (to your own taste)
1/2 teaspoon powdered ginger (can use fresh grated if preferred)
2 tablespoons rice wine vinegar
2 tablespoons soy sauce
2 teaspoons sugar
1/3 cup dry roasted peanuts
4 cups cooked rice, hot

Steps:

  • Combine chicken and cornstarch in small bowl.
  • Toss to coat.
  • Heat oil in large non-stick skillet or wok on medium heat.
  • Add chicken.
  • Stir fry 5- 7 minutes or until no longer pink in center.
  • Remove from heat.
  • Add onions, garlic, red pepper and ginger to skillet.
  • Stir fry 15 seconds.
  • Remove from heat.
  • Combine vinegar, soy sauce and sugar in small bowl.
  • Stir well.
  • Add to skillet.
  • Return chicken to skillet.
  • Stir until chicken is well coated.
  • Stir in nuts.
  • Heat thoroughly, stirring occasionally.
  • Serve over hot rice.

This highly addictive stir-fried chicken continues to be one of the most popular Chinese dishes in America as the succulent, complex sauce of salty, sweet, sour, and spicy flavors is hard to pass up.

Yield Serves 4 as part of a multicourse meal

Number Of Ingredients 17

1 tablespoon soy sauce
2 teaspoons Chinese rice wine or dry sherry
1 1/2 teaspoons cornstarch
1 pound boneless, skinless, chicken breasts or thighs, cut into 1-inch cubes
1 tablespoon Chinese black vinegar, or substitute good-quality balsamic vinegar
1 teaspoon soy sauce
1 teaspoon hoisin sauce
1 teaspoon sesame oil
2 teaspoons sugar
1 teaspoon cornstarch
1/2 teaspoon ground Sichuan pepper
2 tablespoons peanut or vegetable oil
8 to 10 dried red chilies
3 scallions, white and green parts separated, thinly sliced
2 garlic cloves, minced
1 teaspoon minced or grated fresh ginger
1/4 cup unsalted dry-roasted peanuts

Steps:

  • 1. Marinate the chicken: In a medium bowl, stir together the soy sauce, rice wine, and cornstarch until the cornstarch is dissolved. Add the chicken and stir gently to coat. Let stand at room temperature for 10 minutes.
  • 2. Prepare the sauce: In another bowl, combine the black vinegar, soy sauce, hoisin sauce, sesame oil, sugar, cornstarch, and Sichuan pepper. Stir until the sugar and cornstarch are dissolved and set aside.
  • 3. You may need to turn on your stove's exhaust fan, because stir-frying dried chilies on high heat can get a little smoky. Heat a wok or large skillet over high heat until a bead of water sizzles and evaporates on contact. Add the peanut oil and swirl to coat the base. Add the chilies and stir-fry for about 30 seconds, or until the chilies have just begun to blacken and the oil is slightly fragrant. Add the chicken and stir-fry until no longer pink, 2 to 3 minutes.
  • 4. Add the scallion whites, garlic, and ginger and stir-fry for about 30 seconds. Pour in the sauce and mix to coat the other ingredients. Stir in the peanuts and cook for another 1 to 2 minutes. Transfer to a serving plate, sprinkle the scallion greens on top, and serve.

This recipe is adapted from the great Chinese-American chef Ken Hom, for a Sichuan stir-fry is made with chunks of boneless chicken (breasts or thighs, though we prefer thighs), peanuts, chile peppers and plenty of garlic, scallions and ginger. Making it is not at all difficult, but it does require one fussy step: The chicken takes a dip into a combination of egg white, salt, sesame oil and cornstarch before it goes into the hot wok. This step creates a lovely crust on the chicken that sears in moisture and later serves to hold onto the savory-sweet soy-sesame sauce.   • To Prep Marinate chicken in a bowl with salt, Shaoxing wine, sesame oil and cornstarch. Refrigerate for 30 mins. To Cook Heat 2 tbsp cooking oil in wok. Add Sichuan peppercorn, lower heat and fry until aromatic. Dish peppercorns out and set aside. Add garlic and ginger and do a quick stir fry before adding dried red chillies. Continue to stir fry until aromatic and smell spicy. Set aside. Clean wok and heat up with remaining 1 tbsp of cooking oil. Stir fry the marinated chicken until they are 50% cook. Add ingredients from step 3 and continue to until chicken is cooked. Add peanuts and sauce and stir continuously until the chicken is well coated. Remove and serve, garnish with spring onions.c
