Discover our beef casserole recipe by Caroline Barty on HOUSE by House & Garden. Juniper berries add subtle heat and fruity piquancy to a warming winter casserole.

Number Of Ingredients 14

3 tablespoons plain flour
1.2kg beef cheeks, cut into large, 5-6cm pieces
3 tablespoons rapeseed oil
2 onions, roughly chopped
400g carrots, peeled and cut into 1cm pieces
450g swede, peeled and cut into1/2cm pieces
350g turnips, peeled and quartered
2 garlic cloves, finely sliced
1 tablespoon juniper berries, crushed with the back of a knife
1 tablespoon tomato purée
10 sprigs fresh thyme
1.2 litres beef stock
1 tablespoon flat-leaf parsley, finely chopped
Mashed potatoes and curly kale

Steps:

  • Mix the flour with a little salt and freshly ground black pepper and toss the pieces of meat in it. Heat 2 tablespoons oil in a large, heatproof casserole dish and brown the meat in batches for about 2 minutes each side. Transfer to a mixing bowl.
  • Heat the oven to 150°C/fan oven 130°C/mark 2. Heat the remaining tablespoon of oil in the casserole dish and add the onions, carrots, swede and turnips. Stir over a moderate heat for 10 minutes, then add the garlic and juniper berries and cook for 2 minutes. Return the meat to the casserole, stir well, then add the tomato purée and thyme, and pour over the stock. Bring to the boil and season with a little salt and pepper. Cover with a lid and transfer to the oven. Cook for 4 hours, stirring halfway through cooking.
  • Remove the casserole from the oven and stir in the parsley just before serving. To drink
