Japanese Curry with Kimchi Recipe | Allrecipes image

Had leftover kimchi at home and decided to add it to curry - it gives the traditional Japanese curry a nice little kick! Serve over rice.

4 chicken breasts, diced
salt and ground black pepper to taste
2 tablespoons olive oil
4 cups chopped kimchi
6 cups water
1 packet curry sauce mix (such as S&B® Golden Curry®)

Steps:

  • Season chicken with salt and black pepper.
  • Heat oil in a large pot over medium-high heat. Add chicken and kimchi; cook and stir until chicken is browned and cooked through, about 5 minutes. Pour in water; bring to a boil. Remove from heat and add curry sauce mix, stirring until it is completely dissolved. Return to heat and simmer until flavors combine, about 5 minutes.

TRADITIONAL JAPANESE RECIPE: Buta Kimchi is basically stir-fried pork and Kimchi, chili pickled nappa cabbage. A very common japanese version of a Korean dish. This spicy dish is popular in Japan at Izakaya ( bars which serve a lot of small appetizers with drinks ) and also at home as a quick and easy appetizer. For this recipe we will not use Teriyaki sauce, although, you are free to add it. It's mouthwateringly delicious, but may take some practice.

1 cup Kimchi
Pork - for 4 people ( thinly sliced )
3 Green Onions
1 tablespoon Sesame Oil
1 teaspoon Soy Sauce
1 teaspoon Sake

Steps:

  • 01 - Cut Pork into bite-size pieces. 02 - Cut Green Onions into 5cm / 2in length. 03 - Heat Sesame Oil in a frying pan at medium heat. 04 - Place Pork into the flying pan and stir-fry until browned. 05 - Add Onions and Kimchi and cook for a minute. 06 - Add Soy Sauce and Sake. Stir, and cook until liquid is almost gone.

  • 01 - Cut the Nappa Cabbage into bite size pieces. 02 - Slice the long White Onions diagonally. 03 - Cut Nira into 5cm / 2in long pieces. 04 - Cut the bottom part of the Mushrooms and then, using only your own hands, pull apart the Mushrooms into small bunches. 05 - Cut the Tofu into 8 or 10 pieces. 06 - Cut the thin slices of Pork into smaller bite-size pieces 07 - In a large pot, heat the Sesame Oil at medium heat. 08 - Put in the pot the Pork, and stir fry the meat until no longer pink. 09 - Add the Kimchi and cook for a couple of minutes. 10 - Now, add the Dashi and the Kimchi liquid you've saved. 11 - When the Soup starts boiling, add the Miso Paste, Sake, and Salt ( to taste).
