2 onions
600 g free-range chicken thighs skin off, bone out
350 g mixed mushrooms
1 bunch of fresh thyme (30g)
375 g block of all-butter puff pastry (cold)

Steps:

    1. Preheat the oven to 220°C/425°F/gas 7.
    2. Place a 30cm non-stick ovenproof frying pan on a high heat, with a smaller non-stick pan on a medium heat alongside. Pour 1 tablespoon of olive oil into the larger pan.
    3. Peel and roughly chop the onions, adding them to the larger pan as you go.
    4. Roughly chop two- thirds of the thighs, finely chop the rest, and add to the onion pan. Cook for 6 minutes, or until golden, stirring occasionally.
    5. Meanwhile, place the mushrooms in the dry pan, tearing up any larger ones. Let them toast and get nutty for 4 minutes, then tip into the chicken pan and strip in half the thyme leaves.
    6. Remove the pan from the heat, add a pinch of sea salt and black pepper, then stir in 1 tablespoon of red wine vinegar and 150ml of water.
    7. Working quickly, roll out the pastry so it’s 2cm bigger than the pan, then place it over the filling, using a wooden spoon to push it into the edges.
    8. Very lightly criss-cross the pastry, then brush with 1 teaspoon of olive oil. Poke the remaining thyme sprigs into the middle of the pie.
    9. Bake at the bottom of the oven for 15 minutes, or until golden and puffed up. Easy!

Using brisket in this chilli con carne recipe gives amazing texture and wonderful depth of flavour.

2 kg beef brisket trimmed and sliced into 2.5cm thick pieces across the grain
500 ml hot coffee
3 large dried chillies such as ancho, chipotle or poblano
2 red onions
10 cloves of garlic
olive oil
2 heaped teaspoons ground cumin
2 heaped teaspoons smoked paprika
1 heaped teaspoon dried oregano
2 fresh bay leaves
3–4 fresh chillies
2 cinnamon sticks
4 x 400 g tins of plum tomatoes
3 tablespoons molasses or muscovado sugar
3 red, yellow or orange peppers
2 x 400 g tins of beans such as kidney, butter, pinto
soured cream optional

Steps:

    1. Ask your butcher to trim and slice your brisket for you. If you’re doing it yourself, carefully trim the meat by discarding any fat or silver skin. Cut the meat against, rather than with, the grain into 2.5cm thick pieces.
    2. Make the coffee and, while it’s hot, soak the dried chillies in it for a few minutes to let them rehydrate.
    3. Meanwhile, peel and dice the onions and peel and finely slice the garlic.
    4. Heat a few lugs of oil in your largest casserole pan on a low heat, add the cumin, paprika, oregano, bay and onions. Fry for 10 minutes, until the onions have softened.
    5. Deseed and chop half the fresh chillies. Slice up the rehydrated chillies and add them to the onion mixture along with the chopped fresh chilli, the cinnamon sticks, sliced garlic, a good pinch of sea salt and black pepper and a splash of the chilli-infused coffee.
    6. Stir, then add the rest of the coffee, the tomatoes, breaking them up with the back of a spoon, and the molasses or sugar. Add the pieces of brisket and another good pinch of salt and pepper, cover with a lid and simmer for around 3 hours, stirring occasionally.
    7. After a few hours use 2 forks or a potato masher to break the meat up and pull it apart.
    8. Once you’ve done this, deseed, slice and add the peppers, then drain and add the beans. Leave to simmer with the lid off for 30 minutes, or until the meat is completely falling apart and delicious, stirring occasionally.
    9. Have a taste and season well – if you require a bit more heat (like I would), this is the time to deseed and chop the rest of the fresh chilli and stir it in.
    10. Dollop a big spoonful of soured cream over the chilli (if using), and serve straight from the pan, with fluffy rice, flatbreads or potatoes and a really nice fresh lemony green salad. Don’t forget multiple cold beers! Enjoy.

    2. Prick the whole aubergines all over with a fork and steam in a colander over a pan of simmering water for 30 minutes, then halve, scoop out and roughly chop the flesh.
    3. Meanwhile, peel and finely slice the garlic and pick the thyme leaves.
    4. Heat the olive oil in a large frying pan over a medium heat, add the garlic, thyme and aubergine, then crumble over the chilli and cook for 10 minutes.
    5. Tip in the tomatoes, breaking them up with a spoon, then add the balsamic vinegar.
    6. Pick in most of the basil leaves, then bring to the boil and simmer for 10 minutes, or until the sauce has thickened and reduced, then taste and season to perfection with sea salt and black pepper.
    7. Grate the Parmesan and half the Cheddar, roughly slicing the remaining Cheddar.
    8. To layer up, spread a layer of tomato sauce across the base of an ovenproof dish. Sprinkle lightly with grated cheese, cover with a layer of lasagne sheets, then repeat the layers twice more. Finish with a layer of sauce, sprinkle with the remaining grated cheese and dot over the slices of Cheddar.
    9. Bake at the bottom of the oven for 25 to 30 minutes, or until golden and bubbling.
    10. Pick over the remaining basil, drizzle lightly with extra virgin, then serve.

    2. Cut the chicken, lamb or beef into bite-size chunks.
    3. Peel (or trim) and finely chop the alliums and ginger. Finely chop and deseed the chillies (if using).
    4. Place a pan large enough to hold all the ingredients on a medium heat with the oil.
    5. Add the alliums, ginger, chillies or chilli powder, meat and curry powder. Cook for 15 to 20 minutes or until the meat and veg is golden and softened, stirring frequently.
    6. Meanwhile, roughly chop your mixed veg, keeping any leafy greens (if using) to one side for later.
    7. Add the chopped veg (except the leafy greens, if using) to the pan and cook with a lid on for a few minutes, or until softened.
    8. Note the liquid level in the pan, then pour in the curry and tomato sauces and 750ml of water.
    9. Bring to the boil, then reduce the heat and simmer for 35 minutes.
    10. Check that the meat is cooked through and tender – if not, add a splash more water and continue cooking until soft.
    11. Add the reserved leafy veg (if using). Bring back to the boil, and cook until the curry has reduced – the liquid should return to the same level as in step 8.
    12. Season to taste with lemon juice, sea salt and black pepper.
