Steps:
- Combine butter, sugar, eggs, and almond extract in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add flour; beat at low speed until well mixed.
- Divide dough into 8 equal portions. Roll each portion into 8-inch log on lightly floured surface. Wrap in plastic food wrap; refrigerate 2 hours or overnight until firm.
- Heat oven to 350°F.
- Place 4 logs onto large ungreased cookie sheet. Pat each log into 2-inch wide strip. Press 1-inch wide indentation lengthwise down the center of each strip using back of spoon. Bake 16-19 minutes or until edges are lightly browned.
- Spoon about 2 tablespoons fruit spread into indentation of each log; sprinkle with sliced almonds. Immediately cut diagonally into 1-inch pieces. Repeat with remaining dough, jam and almonds.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Line an 8-inch square baking dish with aluminum foil, leaving an overhang.
- Whisk the All-Purpose Flour (1 1/2 cup), Granulated Sugar (1/3 cup), and Salt (1 pinch) together in a bowl.
- Work in the Unsalted Butter (10 tablespoon) with your fingers to make a crumbly dough.
- Scoop out 2 tablespoons of your mixture and put in a container in the fridge. This will become your topping.
- Pour the remaining mixture onto your foil lined dish and press it lightly into an even crust with your fingers. Stick it in the freezer for 10 minutes, until firm.
- Bake the crust, 15 minutes.
- Pull the crust out of the oven and spread Raspberry Jam (6 tablespoon) on top, making sure to leave a 1/2 inch border around the edges. You can use any fruit jam or preserve you have on hand.
- Sprinkle on your crumble topping and pop it back into the oven for 25 minutes, until the edges are golden brown.
- Let cool for 20 minutes, then lift out of the pan and cut into squares.
