- Heat the oven to the lowest setting.
- Mix together the flour and milk until smooth. Add the eggs, sugar, vanilla and a pinch of salt. Leave to rest for approx. 20 minutes.
- Heat a little butter in a frying pan and add a ladle of batter. Cook for 1-2 minutes until golden brown. Flip and cook for the same amount of time on the other side. Keep the finished pancakes warm in the oven whilst making the remainder.
- Serve with jam and sugar.

- For Cherry Jam.
- Roughly chop half of the pitted cherries. Place chopped cherries and remaining whole cherries in a medium-sized, heavy-bottomed pan. Scrape the zest from one lemon and add it to the pan with the cherries. Slice both of the lemons in half and squeeze all of the juice into the pan.
- Set the pan on the stove over medium-high heat and bring to a gentle simmer, stirring frequently. Reduce heat to low. Cover the pan, cracking the lid slightly. Keeping a close eye on the pan; slowly simmer the fruit mixture for about 15 to 20 minutes.
- The fruit should be soft and broken down. Add the sugar; stirring to combine well. Increase the heat and bring the mixture back up to a simmer. Cook uncovered, for about 6 to 8 minutes. The jam will thicken as it simmers.
- To test for desired doneness; dip the back of a metal spoon into the mixture. When the jam is done it will coat the back of the spoon. Remove pan from heat and let cool to room temperature. Transfer cooled jam to a bowl or glass jars; cover and store in the refrigerator. Jam will keep for up to three weeks.
- For Buttermilk Pancakes:
- Preheat oven to 200º F.
- In a large mixing bowl, whisk all ingredients together until smooth.
- Heat a nonstick griddle or skillet over medium heat for 4 to 5 minutes. Brush the hot griddle or skillet lightly with vegetable oil. Pour 1/4 cup of batter for each pancake onto the hot griddle. When bubbles appear on the top of the pancakes and the edges start to look dry, flip the pancake and cook until golden brown on the second side. Adjust heat as necessary. Repeat until all the batter is gone.
- Transfer cooked pancakes to ovenproof plate, do not layer. Place in oven to keep warm.
- Serve immediately with cherry jam topping.

Sift the flour, baking powder, caster sugar, cinnamon and salt into a bowl and make a well in the centre.
Whisk together the milk, eggs and melted butter and then pour this into the well in the flour mix. Whisk together all of the ingredients until you have a smooth batter. Leave to rest for 30 minutes.
Heat a heavy-based frying pan over a medium heat, then add a small knob of butter. When the butter has melted, add 1 tbsp of batter and let it spread. Swirl 1 tsp of raspberry conserve in the middle, and then cover the jam with a little more of the batter. Make sure the jam is fully covered or it will burn when you flip the pancakes. Cook until you see small bubbles appear on the surface, then flip over and cook for 1 min on the other side, until risen and golden. Repeat until you have used all the batter. Serve warm.
