50 ml golden tequila optional
2 spring onions
½ a bunch of coriander (15g)
2 x 400g tins of black beans
80 g feta cheese

Steps:

  • This works great as a stand-alone recipe, but also as a component in Jamie’s Taco Party from Together – see the full collection of menus here. ON THE DAY Preheat the oven to 200°C/400°F/gas 6. I make these beans using the tray of sticky pork juices (Slow-cooked pork belly) for extra flavour and less washing-up. Remove a spoonful of fat from the tray, then place over a medium-high heat on the hob. Add the tequila, if using, or 50ml of water and use a wooden spoon to scrape up all the sticky goodness. Let the alcohol cook away while you trim and slice the spring onions. Add them to the tray, then chop and add the coriander, stalks and all. Pour in the tins of black beans, juice and all, and as soon as they start to bubble, season to perfection, tasting and tweaking. Crumble over the feta cheese, transfer to the oven, and bake for 30 minutes, or until thick and delicious. Fantastic served in a Homemade tortilla with Slow-cooked pork belly.

A splash of lemon juice, a good lug of olive oil and perfect seasoning bring green beans to life

1 lemon
extra virgin olive oil
300 g green beans

Steps:

    1. Finely grate the lemon zest into a large bowl.
    2. Cut the lemon in half and squeeze in the juice from one half.
    3. Add 1 tablespoon of extra virgin olive oil and season with sea salt and freshly ground black pepper. Mix well.
    4. Put a pan of salted water on to boil. Meanwhile, trim the the beans.
    5. Once the water is boiling, steam or boil the beans until tender. Drain well, then tip the cooked beans into the bowl with your dressing and toss everything together, making sure all the beans get coated.
    6. Have a taste and squeeze over the remaining lemon juice if you think it needs it, then serve.

These veggie burgers are packed with protein, a nutrient that is often lacking from a vegetarian diet. But of course, you don’t have to be a vegetarian to enjoy these! Oozy mozzarella, punchy balsamic onions and a tangy, crunchy slaw make this dish a weeknight staple, and you can whip it up in under an hour.

    1. Peel the onion, finely slice into rounds and place in a small bowl with the balsamic and a pinch of sea salt. Set aside.
    2. Halve, deseed and finely chop the chilli. Trim and finely chop the spring onions. Place both in a mixing bowl. Drain the beans and pat dry with kitchen paper. Add to the bowl, along with the breadcrumbs.
    3. Season, then scrunch the bean mixture together with clean hands. Divide into 3 balls, flatten into patties and place 2 in the fridge to chill for 10 minutes (wrap and freeze the spare for another day).
    4. In a small bowl, combine half the lemon juice, 1 tablespoon of extra virgin olive oil and the yoghurt. Season well. Trim the kale and mix into the dressing with the rocket. Put aside.
    5. Heat 1 tablespoon of olive oil in a non-stick pan over a medium heat. When the pan is hot, fry the burgers for 4 minutes on each side, or until golden. If they colour too quickly, reduce the heat.
    6. Slice the tomato and mozzarella into rounds and open the buns.
    7. When the burgers are almost cooked, top each one with mozzarella. Cover the burgers with a lid for 2 minutes to melt the cheese.
    8. Set another pan over a high heat and warm the bun halves, cut-side down, for 2 minutes or until toasted.
    9. Lift the onions out of the balsamic with a fork.
    10. Pop slices of tomato on each bun base, and a burger on top. Top with the balsamic onions and the bun lid. Serve the kale salad alongside.
