2 slices dark pumpernickel bread
kosher salt & freshly ground black pepper
1 (10 ounce) package cauliflower florets
8 ounces elbow macaroni (2 cups)
1 cup heavy cream
1 teaspoon Dijon mustard
2 cups shredded cheddar cheese

Steps:

  • Preheat the oven to 400°F Cut the bread into 2 triangles for jack o’ lantern eyes, 1 large mouth, and 1 stem.
  • Bring a large pot of generously salted water to a boil. Add the cauliflower and cook until tender, about 5 minutes. Use a slotted spoon to transfer the cauliflower to a blender. Add the macaroni to the boiling water and cook until just tender, about 4 minutes. Drain and transfer to a 9-inch pie dish.
  • While the macaroni cooks, add the cream, mustard, and 1 1/2 cups cheese to the blender. Puree until smooth. Season to taste with salt and pepper. Pour over the macaroni and gently stir until well-combined. Top with the remaining 1/2 cup cheese, then the pumpernickel croutons.
  • Bake until bubbling, about 15 minutes.

Number Of Ingredients 10

8 medium red peppers (capsicums), carved into jack-o-lanterns
Gluten-free macaroni (or other gluten-free pasta)
2 cups Kent (Japanese) pumpkin, peeled, diced
2 cups zucchini, chopped
2 cups broccoli, chopped
Cheddar cheese, grated
Cream cheese
½ cup lactose-free milk
½ tsp low FODMAP stock powder
Salt, to taste

Steps:

  • Rinse, dry, hollow out and carve 8 medium red peppers (capsicums) into jack-o-lanterns, set aside. 
  • Boil macaroni in water according to packet instructions or until al dente.
  • While macaroni is cooking, chop vegetables. 
  • When cooked, remove macaroni from the pot, drain and place in a large mixing bowl. Add vegetables to the same pot and cover with water. Cook for ~7 minutes or until pumpkin can be pierced with a fork. Drain water. 
  • Place cooked vegetables, cheddar cheese, cream cheese, milk, salt and stock powder into a blender or food processor. Blend until a smooth sauce forms. 
  • Pour vegetable sauce over the cooked pasta and stir until well combined. 
  • Serve macaroni in red pepper jack-o-lanterns as is or fill and bake in the oven at 200°C/392°F until red peppers are cooked to your liking.

  • Preheat oven to 350°. Cut off (and reserve) the top of each pepper. Remove and discard the cores and seeds. Using a sharp paring knife, carve a Jack O'Lantern face into each pepper. Drizzle the inside of each pepper with oil and season generously with salt and pepper. Place the peppers upright in a large baking dish along with the pepper tops. Heat a tablespoon of oil in a large nonstick skillet. Cook onions until soft, about 5 minutes. Add garlic and cook until fragrant, about 1 minute more. Add beef and cook until meat is no longer pink, breaking up meat with a wooden spoon. Turn off heat and drain fat. Return skillet to stovetop over medium heat. Season with salt and pepper to taste and stir in chili powder. Add fire-roasted tomatoes, 1/2 cup chicken broth, cooked rice and 3/4 cup of cheese. Stir until mixture is evenly combined. Divide rice and beef mixture between hollowed out peppers. Top with remaining 1/2 cup of cheese. Pour remaining 1/2 cup chicken stock into pan. Cover with foil and bake for 30 minutes.  Remove foil and cook for another 10 to 15 minutes, or until peppers are tender and cheese is melty.
