A fun way to make these foil packet dinners is by letting everyone customize and fill their packet themselves. If you'd like to adjust the ingredients provided below, just about any vegetables and seasonings can be added to the packets. Note: Since the ingredients are wrapped tightly in foil, cooking these packets on the grill won’t add a ton of smoky flavor. Just choose the cooking option that’s most convenient - grill or oven.

2 Tbsp Pine nuts (sub walnuts or pecans)
1 clove Garlic, peeled
1 oz Cheese, parmesan (opt), grated
1 1/2 oz Basil, fresh
2 tsp Lemon juice
3 Tbsp Oil, olive
2 Bell peppers, any color, sliced
1 Onions, medium, sliced
12 oz Zucchini, cubed
4 links Sausage, any type pre-cooked or smoked, sliced (chicken sausage works well)
3 cloves Garlic, chopped
12 oz Potatoes, baby red or new, 1/4” / .6 cm slices
2 Tbsp Oil, olive
2 tsp Italian seasoning
1 tsp Paprika, smoked
1 tsp Salt
1/4 tsp Black pepper

Steps:

  • If cooking on a grill: Move grates as close to the heat source as possible. If using charcoal, you can remove the grates and cook the packets directly on the coals. Heat grill to 500F / 260C degrees.
  • If cooking in the oven: Heat oven to 425F / 218C.
  • While grill / oven heats up, toss bell peppers, onions, zucchini, sausage, and garlic with oil (portion for foil packet), Italian seasoning, paprika, salt, and black pepper.
  • Set out a square sheet of foil for each serving. Divide potato slices between foil squares. Top with sausage and vegetables. Fold foil up tightly to fully enclose filling. (Note: If using a lightweight foil, it’s a good idea to double wrap everything in foil just to be sure they don’t break open during cooking.)
  • {grill}: Place the foil packets over direct heat (nestle them right in the coals if using charcoal). Cook, with the lid closed, turning halfway through cooking, until potatoes are tender, 25 to 30 minutes. (Carefully open one of the packets to check for doneness.)
  • {oven}: Place foil packets in a single layer on a sheet pan. Transfer to heated oven and cook, turning halfway through cooking, until potatoes are tender, 25 to 30 minutes. (Carefully open one of the packets to check for doneness.)
  • Serve foil packets directly on plates (so that everyone can open them at the table) or transfer the filling to individual serving bowls. Drizzle pesto over top (reserve half if doubled) at the table. Enjoy!

This makes a fantastic summer meal with minimal clean-up. With the abundance of fresh vegetables, this is a meal itself served with garlic bread. The okra pods and mushrooms are both listed as optional. You may add one or both or leave them out.

2 Italian turkey sausage links
1 medium zucchini, cut into 1-inch slices
1 medium summer squash, cut into 1-inch slices
1/2 medium bell pepper, sliced
1/2 medium onion, cut into wedges
6 -10 okra pods, steam cut off, cut into 1 inch lengths (optional)
1/2 cup mushroom, quartered (optional)
4 -6 garlic cloves, peeled
2 tablespoons olive oil
2 teaspoons dried oregano
2 teaspoons dried parsley flakes
1 teaspoon paprika
salt and pepper

Steps:

  • Place the sausages in a small amount of water and bring to a boil; boil for 3 to 4 minutes or until they are no longer pink; remove from water and allow to cool slightly.
  • Mix together the vegetables, oil and seasonings.
  • Tear 2 sheets of foil (10x10inch), divide the prepared vegetables among the foil sheets, slice the sausages into 1 inch lengths and place on top.
  • Season each packet with salt and pepper to taste, bring foil up to center and fold over several times, sealing well; fold in ends and seal.
  • Preheat grill, place packets on grill and cook 10 minutes, turn over and cook an additional 10 minutes.
  • Enjoy!
