It's a recipe I maded up on the fly for dinner one night to go with steak. It also goes really good with my easy Italian Chicken recipe.

4 lbs small red potatoes
4 tablespoons butter
1 (5/8 ounce) package Italian salad dressing mix
1/2-1 cup milk (I use skim milk)
1 -1 1/2 cup mozzarella cheese
salt & pepper
3 lbs large red potatoes

1.5 (5/8 ounce) packages Italian salad dressing mix
1 cup milk (I use skim milk)
2 -2 1/2 cups mozzarella cheese
salt & pepper

Steps:

  • If you happen to use larger potatoes for the double batch, halve the large potatoes because the small ones for the regualr batch can be left whole.
  • Place all the potatoes in a deep pot and cover with water.
  • Place a lid on the potatoes and bring it to a boil.
  • Once it starts to boil, uncover and cook until tender (about twelve to fifteen minutes).
  • Then drain potatoes and put them back into the hot pot.
  • Add the butter, the seasoning package, milk and cheese. It really depends on how creamy and cheesy you like your potatoes when deciding how much you want to add of the milk and cheese.
  • Smash the potatoes until they are the desired texture.
  • Add the amount of salt and pepper to taste you like and enjoy.

Notes: Gemma Sciabica of Modesto, California, uses a fruity olive oil in her mashed potatoes. If making up to 1 day ahead, cool, cover, and chill. Reheat, covered, in a microwave-safe container in a microwave oven on full power (100%), stirring occasionally, until hot, 5 to 7 minutes. Or bake, covered, in a shallow 1 1/2- to 2-quart casserole in a 325° oven (350° if baking with a turkey at that temperature), stirring once after 30 minutes, until hot in the center, 40 to 50 minutes total.

3 pounds thin-skinned potatoes
About 1 cup milk
1 to 2 tablespoons minced garlic
½ cup olive oil
½ cup grated romano cheese
½ cup minced fresh basil leaves or parsley
? teaspoon paprika or cayenne
Salt and pepper

Steps:

  • In a 5- to 6-quart pan over high heat, bring 1 quart water to a boil.
  • Peel and rinse potatoes; cut into 1-inch chunks. Add potatoes to boiling water; cover and return to a boil, then reduce heat to medium and simmer until potatoes mash easily, 10 to 12 minutes.
  • Meanwhile, in a 1- to 1 1/2-quart pan over medium heat, warm 1 cup milk and garlic until steaming, about 5 minutes. (Or in a 2-cup microwave-safe container, heat milk and garlic in a microwave oven on full power [100%] until steaming, 1 to 2 minutes.)
  • Drain potatoes and return to pan. Add the hot milk mixture, oil, cheese, basil, and paprika. Mash with a potato masher or an electric mixer until potatoes are as lumpy or smooth as you like, adding a little more milk for a softer, creamier texture if desired. Add salt and pepper to taste.

The skin will not let the Potatoes absorb too much water, and it will be easier to peel them. 03 - Once the Potatoes have cooked, drain them and cool their skin under cold runnign water for 1 minute. 04 - Peel the Potatoes simply by removing their skin by hand ( if they are well cooked the skin should come off very easily ). 05 - Using a potato ricer or a food mill, mash the Potatoes in the same pot you have cooked them in. 06 - Add the Milk and stir everything over a low heat. 07 - Add Butter, Salt, Nutmeg and Parmesan Cheese if used and mix until the Mashed is smooth.
