Where I come from.. it's all about the Italian cuisine! Trust me, you don't have to be Italian to enjoy the food. Although, it doesn't hurt. :) Our town has many family owned Italian restaurants and every one of them have greens on the menu as an appetizer. I have yet to have a plate of greens I didn't like. But, I am all about home cooked meals. So, of course, it would be fitting to prepare this lovely appetizer, or side dish at home. You'll find many different recipes for greens, each family makes it their own traditional way. Our way is a combination of my husband's family recipe & mine.

1 bunch(es) fresh collard greens, washed, stems removed, and chopped
1 bunch(es) fresh spinach, washed, stems removed, & chopped
2 pound(s) escarole, fresh washed, cored, and chopped
1/4 cup(s) extra virgin olive oil
2 medium white onions, julianned
6-8 clove(s) garlic, peeled & sliced
1-2 teaspoon(s) hot red pepper flakes
1 teaspoon(s) coarse sea salt
- parmesan cheese, for topping

Steps:

  • In a large pot, fill with water. Bring to a boil. Add chopped collard greens, spinach, and escarole. Bring to a boil and cook until greens are tender. About 8-10 minutes. Greens will be soft, but not mushy. Remove greens and set aside in a strainer to drain excess water. Can squeeze greens to remove water as well.
  • In a large skillet, heat EVOO over medium-high heat. Add julianned onions and saute 3 minutes. Reduce heat to medium. Add garlic and hot pepper flakes and saute 2-3 minutes. Be careful not to burn garlic.
  • Add greens and toss with tongs in oil. Sear greens about 3-5 minutes.
  • Remove pan from heat, add salt and parmesan cheese, toss to mix. Serve with fresh Italian bread... as an appetizer, or a side dish.

You can make these simple Italian greens with cabbage, chard or even good-old salad leaves

6 big handfuls mixed greens, leaves and herbs
olive oil
2 cloves garlic peeled and sliced
sea salt
freshly ground black pepper
extra virgin olive oil
1 lemon juice of

Steps:

    1. This dish can be eaten either cold as an antipasto or warm as a vegetable contorno. The great thing about it is that you can use any combination of greens, such as baby cabbage leaves, Swiss chard and even salad leaves like cos, gem or Romaine. You can easily buy a big bag of spinach, rocket and watercress and use some yellow celery leaves and other herbs like basil, parsley, sorrel and fennel tops to give you a good mixture. Most Italians have a vegetable garden, and no matter how big or small it is they always have greens and veggies to hand. This recipe sees the more robust leaves blanched first, then wilted down in a pan with the salad leaves, herbs and garlic until soft and tender.
    2. Blanch the cabbage leaves and chard to perfection in a pot of salted boiling water for a couple of minutes, then drain in a colander and leave to cool down a little. Put a couple of good lugs of olive oil into a large frying pan or casserole type dish and add the sliced garlic. As soon as it starts to take on the smallest amount of colour, throw in your salad leaves then the cabbage and Swiss chard.
    3. Cook on a medium heat for about 4 to 5 minutes, moving the greens around the pan with a spoon or a pair of tongs, then add your herbs and cook for a further minute. Remove from the heat and season carefully to taste with salt and pepper, some good-quality extra virgin olive oil and enough lemon juice to give it a little kick.
