Italian Burritos Recipe: How to Make It image

My family is very picky, so I created this Italian burrito loaded with beef, cheese and sauce to satisfy everyone. It turned out great! —Donna Holter, Centennial, Colorado

1 pound lean ground beef (90% lean)
1 cup marinara sauce
1/2 cup shredded part-skim mozzarella cheese
1/4 cup grated Parmesan cheese
1/4 teaspoon garlic powder
8 whole wheat tortillas (8 inches)

Steps:

  • Preheat oven to 375°. In a large skillet, cook beef over medium heat until no longer pink, 6-8 minutes; crumble meat; drain. Stir in marinara sauce, cheeses and garlic powder., Spoon 1/3 cup filling in the center of each tortilla. Fold bottom and sides of tortilla over filling and roll up. Place on a baking sheet coated with cooking spray. Bake 18-20 minutes or until bottoms are light brown.

8 large flour burrito tortilla wraps
1 tablespoon(s) olive oil
1 medium onion chopped
4 clove(s) garlic minced
1 pound(s) ground beef
1 pound(s) sweet italian sausage casing removed
2 - 24 oz spaghetti sauce your choice
4 tablespoon(s) tomato paste
1 tablespoon(s) better than bouillon beef bouillon
1 tablespoon(s) italian seasoning
- salt and pepper to taste
7 ounce(s) fresh mozzarella thinly sliced
2 cup(s) shredded mozzarella cheese

Steps:

  • Place oil in large pot. Saute the onion and garlic until onion is translucent. Add the beef and sausage and cook until meat is browned. Add 1 jar of spaghetti sauce, tomato paste, beef bouillon, Italian seasoning, and salt.
  • Cook until warmed through and thick. Preheat oven 350 degrees. Warm the tortilla wraps. Spray a 9x13 pan with cooking spray. Add the beef mixture to middle of each tortilla wrap. Top with fresh mozzarella cheese and roll up and place in pan. Repeat until all is used up
  • Pour the other bottle of spaghetti sauce evenly over each and top with shredded mozzarella cheese. Bake for 20 minutes.

Add potatoes and spices and cook for 6 to 8 minutes, until browned.Add cooked vegetable mix and blend well. Remove from heat.Marina sauceHeat oil in kettle. Saute garlic and onions until onions are translucent, about 5 minutes.Add tomatoes, salt and pepper.Bring to a simmer for 10 minutes. Add basil and parsley and mix well.

  • "Before cutting the potatoes, put them in the microwave for 5 minutes to speed up the cook time. Also preheat the oven for the Italian sausage at 350 (or whatever they suggest on the package). Put the sausage in the oven then continue on, we'll get back to them. (I prefer Italian sausage over breakfast sausage but you can easily replace it.) Cut the potatoes and onion and throw them in a large frying pan coated with the extra virgin olive oil. Dribble oil over the potatoes while in pan, and sprinkle on salt and pepper for taste. Cook until the potatoes start to soften and brown a bit. Then after cooking the sausage over half way, I throw the sausage (cut in small bits) in the pan as well. Cover and continue to cook/stir occasionally until the sausage is cooked fully. Cook two eggs per burrito (scrambled). Throw the onion, potato, sausage concoction into the burrito with the eggs. I like cheese in mine as hot sauce as well. And enjoy! It's real easy and quick and you can make a lot of food quick. Add veggies if you'd like too!"
