2 large plain wafers
1 tablespoon butter
6 cups miniature marshmallows
1 1/2 cups semi-sweet chocolate chips
1 1/2 cups roasted whole almonds

Steps:

  • Roast the almonds in a preheated 375 F oven for approximately 10 minutes (do not burn).
  • Melt butter and marshmallows together in a large pot. Once the marshmallows have melted, add the chocolate chips and stir until melted. As soon as the chocolate mixture is melted, stir in the roasted almonds.
  • Quickly spread the chocolate mixture on the wafer using a large buttered spoon. Once even, place the second wafer on top. Place something heavy on top of the wafer, and let sit for several hours to set. Cut diagonally into small cookies.

2 pounds almond paste
1 cup all-purpose flour
8 egg whites
2 cups white sugar
2 cups confectioners' sugar
2 cups sliced almonds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, use your hands to mix together the almond paste, flour, egg whites, white sugar and confectioners' sugar until well blended. The mixture will be very sticky. Place the sliced almonds into a small bowl. Scoop out rounded teaspoonfuls of the dough and drop them into the almonds. Roll until completely coated. Place 2 inches apart onto the prepared cookie sheets.
  • Bake for 15 to 20 minutes in the preheated oven, until golden brown. Cool on cookie sheets for a few minutes before removing to a wire rack to cool completely.
