Number Of Ingredients 9

1 cup finely ground white rice flour
1 teaspoon dried basil
1/4 teaspoon salt
Pinch granulated garlic
Pinch freshly ground black pepper
2 large eggs ((about 3 1/2 ounces; 100 grams))
1 cup dried gluten-free bread crumbs ((4 ounces; 113 grams))
12 pieces string cheese (cold and unwrapped)
Vegetable Oil

Steps:

  • Line up three plates on your counter. On first plate, whisk together white rice flour, granulated garlic, salt, dried basil, and freshly ground black pepper. On second plate, whisk eggs until smooth. On third plate, place bread crumbs.
  • Cut cheese sticks in half. Roll string cheese in white rice flour, coating well. You don’t want any bare spots on the cheese stick. Take care to coat ends of cheese stick with flour. This prevents stick from “leaking” during frying.
  • Roll cheese stick in egg, coating thoroughly. Return cheese stick to white rice flour and coat again. Return again to egg and coat thoroughly. Finally, roll coated sticks in bread crumbs. Place coated stick on a baking pan or large dish. Repeat until all sticks are coated. Chill cheese sticks for five minutes.
  • Heat 1/2-inch of oil in an 8-inch frying pan. Sprinkle a little white rice flour on the surface of the oil. If flour sizzles, oil is ready.
  • Remove cheese sticks from refrigerator. Place six cheese sticks into the pan. Fry for 30 seconds. Using a heat-proof spatula, roll sticks in oil to turn. Fry an additional 30 seconds or until the sticks are golden brown. If any cheese begins to leak, remove sticks from oil.
  • Repeat with remaining cheese sticks. Serve with sauce and enjoy!

I have always been a sucker for those fried cheese sticks that you can get in many restaurants. Melted cheese, crispy fried seasoned bread crumbs! YUM! All it took to make the leap to making these gluten-free was swapping out the typical italian bread crumbs or japanese panko crumbs that most recipes call for and using gluten-free bread crumbs instead.

12 sticks mozzarella string cheese
1-2 eggs (beaten)
1/2 cup flour
1/2 cup gluten-free breadcrumbs
1/4 cup parmesan cheese
1 tbsp dried parsley
cooking spray

Steps:

  • Preheat oven to 400° F. Lightly spray your baking sheet with oil.
  • Cut cheese in half to give you 24 pieces. Place cut cheese sticks in the freezer until cheese is frozen (about 30 mins).
  • In a small bowl, whisk the egg(s). Place the flour on another small bowl. In a separate bowl, combine bread crumbs, parmesan cheese and dried parsley.
  • Make an assembly line of the three bowls: flour, egg mixture, and bread crumbs mixture.
  • Dip the string cheese, one at a time, in the flour, then in the egg mixture and then in the bread crumbs, making sure to completely coat each piece of string cheese.
  • Repeat this process with the remaining cheese and place them on your baking sheet.
  • Spray the tops of the mozzarella sticks with a little more oil and bake in the oven 4 to 5 minutes. Turn and bake an additional 4 – 5 minutes watching them closely so they don’t melt.
  • Serve immediately.
