You can make great tasting butter at home just by putting heavy cream in a food processor and running it till it turns into butter.

Yield 1 cup butter

Number Of Ingredients 2

2 cups heavy cream
¼ teaspoon salt

Steps:

  • Pour cream into a food processor or blender. Process for 10 minutes, or until the butter separates. Strain off the liquid. Season to taste with salt if you like. Press butter into a small bowl with the back of a spoon to further remove liquid.

For those of us that like to cook with real butter and olive oil and try to stretch it as far as it can go, you are going to love this. I got this idea from my mother and it is fantastic.

Yield 3 lbs

Number Of Ingredients 2

1 lb real salted butter or 1 lb unsalted butter
2 cups olive oil

Steps:

  • Let your butter get to room temperature and place in mixer (if you're using a hand mixer then place it in a medium to large bowl).
  • Whip the butter until it is fluffy.
  • Then with your measured 2 cups of olive oil drizzle it into the butter as it is mixing.
  • Once everything is mixed well it will be as thick as cake batter.
  • Pour into plastic container with a lid and place in the refrigerator over night.
  • It will harden and spreads easily.

  • Combine all the marinade ingredients and coat the chicken breasts. Leave for 30 minutes to marinade in the fridge.

    Meanwhile, melt the butter in a large pan over a medium heat and soften the onion in it for 20 minutes, until golden brown and completely soft. Add the ginger and garlic, then stir through the chopped tomatoes with the smoked paprika, fenugreek, garam masala, chilli powder and tomato purée. Add 300ml water and simmer for 20 minutes, until thickened.

    Heat a pan with the vegetable oil. Add the chicken pieces and fry for 5-6 minutes until brown all over. You may need to do this in two batches. 

    Add the browned chicken to the curry sauce and simmer for 10 minutes with the lid on. Stir through the yogurt and coriander. Meanwhile, cook the rice according to the instructions on the packet. Serve the chicken with the basmati rice.
