Steps:

  • Simmer ginger in water, strain: Bring 2 cups of water to a boil in a saucepan.
  • Add ginger. Reduce heat to medium low and let ginger sit in the simmering water for 5 minutes.
  • Remove from heat and let sit for 20 minutes. Strain liquid through a fine mesh strainer. Discard ginger pieces.
  • Make simple syrup: In a separate saucepan, make the Simple Syrup by dissolving 1 cup granulated sugar into 1 cup of boiling water. Set aside.
  • Assemble: Make individual (tall) glasses of ginger ale by mixing 1/2 cup of ginger water with 1/3 cup of Simple Syrup and 1/2 cup of club soda.

2 liters seltzer or club soda, chilled
170 grams 4- to 5-inch piece fresh ginger (about , peeled and cut into small pieces
8 servings Thinly sliced lemon for garnish, optional
59 milliliters fresh lemon juice
473 milliliters sugar

Steps:

  • Combine fresh ginger and sugar in bowl of a food processor. Process until ginger is finely ground.
  • Transfer to a large saucepan, add lemon juice and stir in 2 cups cold water. Bring to a boil over high heat, stirring. Reduce heat slightly and simmer until thick and syrupy, about 30 minutes.
  • Remove from heat, cover and steep for 20 minutes. Strain and cool. (You should have about 2 cups.) Syrup can be made up to 2 weeks in advance. Keep tightly covered and refrigerated.
  • Just before serving, fill 8 tall glasses with crushed ice.
  • Pour about 1/4 cup of chilled ginger syrup into each glass. Fill with chilled seltzer and serve right away, garnished with lemon slices, if desired.
