How to Cook a Perfect Filet Mignon | Pan-Seared Filet image

Craving a rare filet mignon, but unsure how to cook it? Our pan-seared filet recipe melts in your mouth and cooks perfectly every single time!

2, 6-oz filet mignon steaks
1 tsp coarse sea salt
Freshly ground black pepper, to taste
1 Tbsp grapeseed oil

Steps:

  • 1. Preheat oven to 400°F.
  • 2. Pat the filet mignons dry with paper towels and let steaks rest at room temperature for 30 minutes. Allowing the rest period helps ensure even cooking of the steak. Generously season both sides of the filet with salt and pepper.
  • 3. Heat an oven-safe stainless steel or cast-iron skillet over medium-high heat for 5 minutes. Heat the grapeseed oil and once it begins to smoke, add the steaks to the pan.
  • 4. Cook filet mignon for about 3 minutes until a golden-brown crust forms, making sure to not touch. Carefully flip the steak over and cook on the other side for another 3 minutes.
  • 5. Transfer the pan to the oven and cook for about 6 minutes for a medium-rare steak. Keep in mind the temperature of the steak may increase up to 5 degrees as it rests.
  • 6. Transfer the steak to a cutting board and let rest for at least 5 minutes before slicing. This step is critical to cutting into a juicy steak with each bite!

Oh, and don’t forget the Best. Meal. Ever. Luckily, our filet mignon fits the bill: it simplifies a fancy restaurant dish into a homemade extravagance and the best part? Our recipe serves just one: that’s right. It’s allll for you!

Yield 1 serving

Number Of Ingredients 7

6 oz filet mignon
coarse salt, to taste
freshly ground black pepper, to taste
1 tablespoon grapeseed oil, or other high-heat, neutral oil of choice
2 tablespoons unsalted butter
2 sprigs fresh rosemary
1 clove garlic

Steps:

  • On a cutting board, pat the filet mignon dry with paper towels and let sit at room temperature for 20-30 minutes.
  • Preheat the oven to 450°F (230°C).
  • Generously season all sides of the filet mignon with salt and pepper.
  • Heat a medium, oven-safe stainless steel or cast iron skillet over high heat for 5 minutes. Add the grapeseed oil.
  • Once the oil beings to smoke, add the filet mignon to the pan. Cook without moving for 2-3 minutes, until a crust has formed.
  • Use tongs to flip the steak over, then add the butter, rosemary, and garlic to the pan.
  • Tilt the pan and spoon the butter continuously over the steak for 2-3 minutes.
  • Transfer the pan to the oven for 7 minutes for a medium rare steak.
  • Transfer the steak to a cutting board and let rest for at least 10 minutes before slicing.
