A Taiwanese snack consisting of hard boiled eggs repeatedly simmered in soy sauce and spices then air dried.

Number Of Ingredients 11

6 large eggs
3 cups prepared black tea
2 cups water
1/4 cup soy sauce
1 TBSP raw honey
1/2 tsp sesame oil
1/2 tsp ground cinnamon
1/2 tsp Sichuan peppercorns
1 tsp crushed red pepper flakes
2 star anise
2 cloves

Steps:

  • 1. Place the eggs in a small size saucepan and cover with water. Bring to a boil then cover the pan take off the heat. Let eggs sit for 10 minutes.
  • 2. Drain the eggs and run them under cool water then peel off the shells. Mix together the remaining ingredients in the saucepan and add the peeled eggs. Bring to a boil over medium-high heat. Cover the pan and reduce the heat to low. Simmer over low heat for 10 minutes.
  • 3. Turn off the heat and using a slotted spoon transfer the eggs to a paper towel lined plate and allow to air dry for 10 minutes. Dont get rid of the liquid in the pan your not done with it yet.
  • 4. Return the eggs back into the pan and bring to a boil again then once again cover the pan and reduce the heat to low, simmer for 10 minutes. Then once again turn off the heat and transfer the eggs to the plate to dry for 10 minutes again. Repeat this process of simmering and air drying 8 more times or until the eggs are very dark brown, adding water to the pan if the liquid gets too low.
  • 5. Cover the eggs and refrigerate for at least 30 minutes before serving.

Tiedan is a famous snack in Tamsui Town, Taipei County, Taiwan. According to legend, Huang Zhangchao, who runs a small noodle stall by the seaman (Haijiao) called "Haijiao Hotel" by the ferry boat, was a rainy day. In the days when the business was not good, the stewed eggs were continuously returned to the pot because the sea breeze continued to blow the stewed eggs. After interviewing the Minsheng Daily reporter Lin Mingyu in 1983, he wrote a report titled "Grandma's iron egg, I just want to get it." The report attracted the attention of many people. Some media even came from Japan. After the interview, iron eggs became a famous snack in Danshui.

45 quail eggs
5 slices ginger
3 tablespoons Soy sauce
1 littre brine
4 petals garlic
2 pieces Shallots

Steps:

  • Put the quail eggs in the soup pot, add enough water and cook for 10 minutes on medium heat, remove and immerse in cold water, peel off the eggshells after cooling, and rinse with water to wash off the broken eggshells
  • Pour the brine juice into a casserole, add garlic, ginger and green onion knots, and boil on high heat
  • After the marinade is boiled, gently put in the peeled quail eggs, then pour in the dark soy sauce
  • Cover the pot and cook for 10 minutes on low heat, then remove, let it cool naturally, and then put it in the pot and cook for 10 minutes on low heat, repeat 10 times
