A favorite St. Patrick's Day recipe, classic Irish soda bread is leavened with baking soda and some type of acidic ingredient, usually buttermilk. Raisins add sweetness to this hearty bread.

2?¼ cups all-purpose flour
¼ cup sugar
1?½ teaspoons baking powder
½ teaspoon baking soda
1 teaspoon salt
3 tablespoons butter, chilled and cut into small pieces
¾ cup raisins
1 cup low-fat buttermilk
Cooking spray

Steps:

  • Preheat oven to 350°.
  • Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 4 ingredients in a large bowl; cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal. Stir in raisins. Add buttermilk; stir with a fork just until moist.
  • Turn dough out onto a lightly floured surface; knead 3 or 4 times.
  • Press dough into an 8-inch round pan coated with cooking spray.
  • Bake at 350° for 30 minutes or until lightly browned. Cool in pan 10 minutes. Cut into 12 wedges.

Number Of Ingredients 9

Nonstick vegetable oil spray
2 cups all purpose flour
5 tablespoons sugar, divided
1 1/2 teaspoons baking powder
1 teaspoon salt
3/4 teaspoon baking soda
3 tablespoons butter, chilled, cut into cubes
1 cup buttermilk
2/3 cup raisins

Steps:

  • Preheat oven to 375°F. Spray 8-inch-diameter cake pan with nonstick spray. Whisk flour, 4 tablespoons sugar, baking powder, salt, and baking soda in large bowl to blend. Add butter. Using fingertips, rub in until coarse meal forms. Make well in center of flour mixture. Add buttermilk. Gradually stir dry ingredients into milk to blend. Mix in raisins.
  • Using floured hands, shape dough into ball. Transfer to prepared pan and flatten slightly (dough will not come to edges of pan). Sprinkle dough with remaining 1 tablespoon sugar.
  • Bake bread until brown and tester inserted into center comes out clean, about 40 minutes. Cool bread in pan 10 minutes. Transfer to rack. Serve warm or at room temperature.
