Traditional Irish Christmas Cake Recipe - thefoodellers.com image

This traditional Irish Christmas Cake is perfect dessert for the holidays. Learn how to make this cake at home.

Yield a 18cm/8″ round cake tin

Number Of Ingredients 18

225 grams all-purpose flour
175 grams butter
175 grams Muscovado sugar
4 eggs
1/2 teaspoon salt
The peel of a lemon
The peel of an orange
1 teaspoon powder cinnamon
1 teaspoon powder cloves
100 grams almond flour
1 teaspoon powder ginger
1 teaspoon nutmeg
6 tablespoons Irish whiskey
200 grams sultanas
150 grams raisins
100 grams currants
100 grams candied orange and lemon
100 grams chopped almonds

Steps:

  • Put the raisins, the sultanas and the currants in a large bowl, add 4 tablespoons of brandy and mix well then cover and let the brandy absorb for 12 hours.
  • Turn on the oven at 130°C/266°F and line an 18cm/8″ round tin with a double layer of parchment paper.
  • Pour the flour, the butter at room temperature, the sugar, the eggs, the peel of the lemon and the orange, the mixed spices, the nutmeg and beat until a smooth and creamy mixture is obtained.
  • Pour the raisins and candied fruits plus almonds and almond flour in the mix and mix well using a wooden spoon until the ingredients are well combined. Your mixture will be extremely sticky at this point.
  • Transfer the mixture into the pan, leveling the surface and then bake for about 5 hours always at a low temperature (130°C/266°F). The cooking can be checked by using the toothpick test (Insert a toothpick into the center of the cake. Pull it out and if it's fully baked, there won’t be any wet batter on it).
  • Let it cool completely, wet it slightly with whiskey and wrap it well in three sheets of parchment paper. Store the cake in an airtight container, letting it soak in the whiskey and wetting it every 3-4 days with more whiskey so that it stays longer.
  • If you want to decorate the cake, take some honey and spread it on the surface, then put a marzipan layer first, followed by a layer of white royal icing. Add other Christmas-themed sugar decorations and consume after at least 24 hours after it was decorated by cutting it into slices of the desired size.

  • Preheat the oven to 160°C/fan 140°C/gas mark 3. Grease an 18cm square cake tin and line with baking parchment. Tie a folded piece of baking parchment around the outside of the tin to protect against the heat. 

    Place the mixed fruit and brandy in a large pan and heat gently for 4 minutes. Transfer to a bowl and leave to cool. Add the ginger, chopped almonds and lemon and orange zest.

    Sift the flour, mixed spice, cinnamon and ½ tsp salt into another bowl. In a separate large bowl, whisk together the sugar and butter until fluffy, then gradually beat in the eggs until combined. Fold in the flour and spice mixture and the ground almonds, then fold in the soaked fruit and nut mixture.

    Spoon into the prepared tin and level. Bake for 2½ to 3 hours, until a skewer inserted into the middle comes out clean. Cover with foil for the last part of the cooking time if it’s getting too dark. Leave to cool in the tin for a few minutes, then transfer to a cooling rack. 

    Brush the cake with the glaze. Dust your work surface with the icing sugar and roll out the marzipan to ½cm thick. Lay over the cake, trim, then brush with boiled, cooled water. Roll out the icing to 1cm thick, then lay over the cake and trim.

    Cut 3 stars from the icing trimmings with a large cookie cutter. Remove the centres with a smaller star cutter and set aside. Stick the outlines on the cake with warm water. Decorate the cake to your taste.

    Put the butter and sugar in a large mixing bowl. Cream together using a handheld electric whisk. Gradually whisk in the eggs, then fold in the flour and the mixed fruit. Spoon the mixture into the tin and smooth the top.

    Bake for 3 hours 45 minutes to 4 hours or until a skewer inserted into the middle of the cake comes out clean. Cover with greaseproof paper if it’s getting too brown. Cool in the tin for 15 minutes and turn out on to a wire rack to cool. Decorate when cold.

  • For the cake: Preheat oven to 325 F. Grease and flour a bundt cake pan. Sprinkle nuts over bottom of pan. If desired, sprinkle a couple of tablespoons of brown sugar over the nuts. Mix all cake ingredients together. Pour batter into pan over nuts. Smooth out ’til the top is even. Bake for 1 hour, or a little less if the pan is black. Do not overbake!
    For the glaze: While cake has ten minutes to go, make the glaze. Melt butter in saucepan. Stir in water and sugar. Boil for 4 to 5 minutes, stirring constantly. Turn off flame and pour in rum. Stir to combine and reheat for 30 seconds. Remove cake from oven. Immediately drizzle 1/3 of the glaze on the bottom (top) of the cake. Allow to sit for five minutes. Invert the cake onto a serving plate. Prick surface a hundred times with a fork (gently, please.) Slowly drizzle remaining rum glaze all over the top of the cake, allowing it to drip down the sides. Cool to room temperature before serving to ensure glaze has soaked in. Eat. Enjoy. And don’t feel guilty. It’s Christmastime!
