- Bring a large pot of water to a boil over high heat. Add pork ribs and blanch for 5 minutes. Remove cooked ribs from the pot, then drain and rinse them well. Set aside.
- In a large mixing bowl, combine Chinkiang black vinegar, rice vinegar, orange juice, Shaoxing wine, light soy sauce, and dark soy sauce. Mix well and set aside.
- In an electric instant pot turned to saute mode, cook the sugar until it melts and caramelized. Stir in the ribs, sauce, sliced ginger, and green onions. Mix well to combine.
- Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 8 minutes.
- Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Switch the cooker to saute mode. Saute to reduce the sauce, for about 10-15 minutes.
- Discard sliced ginger and green onions. Stir the ribs well. Serve hot.
