Sticky Rice Instant Pot - Gives you some many choices, here we made a coconut sticky rice in a pressure cooker.

1 cup glutinous rice
1 pandan leaf (optional)
1 cup Water
3 tbsp palm sugar
1 cup Coconut Cream
? tsp salt

Steps:

  • Dissolve the palm sugar in water - we used the instant pot on saute. After it is dissolved strain it as there will be some lumps and bits as this is real raw palm sugar
  • Cook the Coconut cream - again turn the instant pot to saute and boil for 1-2 minutes and then tip out into a bowl
  • Add 1-2 tablespoons coconut cream to the water (1 cup) and mixAdd the rice and the water to the instant pot and stir well, then add a pinch of saltAdd 1 cup of the palm sugar mix and stirPut on the lid and cook for 22 minutes on high pressure and 10 minutes natural pressure release
  • After cooking taste and check the texture - you can add more of the palm sugar water mix to increase the liquid and make it a little sweeterServe into a bowl or cup and drizzle the coconut cream over the top

This easy recipe for coconut rice couldn’t be more simple or delicious. Ready in just 20 minutes, it makes the perfect delicately sweet and nutty base for any of your favorite curry recipes. Once you have the basic formula for making Instant Pot rice down, you can branch out with other flavor profiles as well, such as saffron rice and green rice.

Number Of Ingredients 6

1?½ cups jasmine rice, rinsed and drained
1 (13.5-oz.) can unsweetened coconut milk, well shaken and stirred
1 tsp. olive oil
1 tsp. kosher salt
1 tsp. granulated sugar
2 scallions, chopped

Steps:

  • Combine rice, coconut milk, oil, salt, and sugar to the bowl of an Instant Pot, stirring to submerge rice completely in liquid. Cover with lid, and turn to “rice” setting, making sure steam valve is closed. When done, let stand for 10 minutes.
  • Open steam valve, and allow remaining steam to escape. Carefully remove lid, and fluff with a fork. Top with scallions, and serve immediately.
