2 lb Brussels sprouts, washed and trimmed (about 8 cups)
1 cup water
1 tablespoon butter
1 teaspoon salt
1/2 teaspoon pepper
6 slices bacon, crisply cooked and crumbled

Steps:

  • Add Brussels sprouts and water to insert of 6-quart Instant Pot®; stir.
  • Secure lid; set pressure valve to SEALING. Select MANUAL; cook on high pressure 2 minutes. Select CANCEL. Set pressure valve in VENTING position to release pressure. Drain.
  • Toss cooked Brussels sprouts with butter, salt and pepper. Top with bacon.

3 slices applewood-smoked or regular bacon, coarsely chopped
1 medium onion, cut into thin wedges
4 cup smalls Brussels sprouts, trimmed (halved, if large)
½ cup reduced-sodium chicken broth
2 tablespoons coarse ground or Dijon-style mustard
2 tablespoons maple syrup

Steps:

  • Use a 6-qt. electric or stove-top pressure cooker. Set electric cooker on sauté setting or place stove-top cooker over medium heat and cook bacon, uncovered, just until crisp, stirring occasionally. Drain on paper towels, reserving 1 Tbsp. drippings in cooker. Add onion to reserved drippings; cook, uncovered, 2 minutes or until onion begins to soften, stirring occasionally. Add Brussels sprouts and broth.
  • Lock lid in place. Set electric cooker on high pressure to cook 3 minutes. For stove-top cooker, bring up to pressure over medium-high heat; reduce heat enough to maintain steady (but not excessive) pressure. Cook 3 minutes. Remove from heat. For both models, quickly release pressure. Open lid carefully.
  • Drain sprouts mixture in a colander; transfer to a serving bowl. Add mustard and maple syrup; toss to coat. Stir in bacon.
