Turkey and Swiss cheese panini with sundried tomato mayonnaise made with dinner rolls are quick and delicious!

Number Of Ingredients 10

4 Sister Schubert's Dinner Yeast Rolls, split
4 slices roast turkey or ham
4 slices Swiss, Monterey Jack, or Gruyere cheese
8 small slices red onion
1 cup fresh spinach leaves or several fresh basil leaves
Salt and freshly ground black pepper
Butter
¼ cup mayonnaise
2 finely chopped sundried tomatoes
Salt and freshly ground black pepper

Steps:

  • Preheat grill pan or panini machine to medium heat.
  • Spread center of each roll with 1 tablespoon mayonnaise. Assemble sandwiches with remaining ingredients, except butter. Season with salt and pepper.
  • Spread small amount of butter on top and bottom of each roll; place sandwich either in pan on onto panini machine and grill. Cook 5 to 7 minutes.
  • (If using a pan, press sandwich down with a pan lid. Cook sandwiches about 3 to 4 minutes on each side or until bread is toasted.)
  • For mayonnaise: whisk all ingredients together in small bowl. Refrigerate until ready to use.

This is a recipe that we used in Pennsylvania for kids birthday parties. I remember my parents grinding the bologna in a old fashion meat grinder. They spread it on white bread and cut the sandwiches into triangles. Of course, we also had cake and ice cream.

1 pound bologna, cut into pieces
½ cup mayonnaise
¼ cup dill pickle relish

Steps:

  • Place the bologna in food processor, and pulse until smooth. Transfer to a medium bowl. Stir in mayonnaise and pickle relish.

  • 1. Preheat Smoker or oven to 225° F 2. Remove membrane from back of ribs by sliding finger under then lifting to remove. 3. Trim and excess fat 4. Rub mustard on ribs then evenly add your Rib Rub 5. Place ribs directly on smoker or on a cookie sheet in the oven 6. Spritz with juice every 30 minutes or when ribs appear to be drying out 7. Smoke for 3-4 hours then remove from smoker or oven 8. Wrap ribs in double layer of aluminum foil with 1/4 cup juice and a little extra rib rub and place back on smoker or in oven 9. Cool another 2-3 hours and remove 10. Turn ribs over and remove individual bones either by pulling them out (if they're tender enough) or using a knife and scoring the back to remove them. 11. Brush on 1 Cup if your BBQ sauce and place ribs back on smoker or in oven for 30 minutes then remove. 12. Slice loaf of bread in half lengthwise and place your ribs on the bread. Pour on your other 1 Cup of BBQ sauce and add pickles and onions. 13. Slice for however many guests you have and enjoy.
