INY’S PRUNE CAKE - THE PIONEER WOMAN – RECIPES ...

Iny’s Prune Cake - The Pioneer Woman – Recipes ... image

I was fortunate enough to happen upon this recipe for my great-grandmother Iny’s Prune Cake a few years ago.

Provided by Ree Drummond

Categories     Christmas    breakfast    dessert    main dish

Total Time 1 hours 5 minutes

Prep Time 25 minutes

Cook Time 40 minutes

Yield 12 servings

Number Of Ingredients 20

FOR THE CAKE:
1 c. Prunes
1 c. Sugar
3 whole Eggs
1 c. Canola Oil
1 1/2 c. Flour, Sifted
1 tsp. Baking Soda
1 tsp. Nutmeg
1 tsp. Allspice
1 tsp. Cinnamon
1 c. Buttermilk
1 tsp. Vanilla Extract
_____
FOR THE ICING:
1 c. Sugar
1/2 c. Buttermilk
1/2 tsp. Baking Soda
1 tbsp. White Corn Syrup
1/4 c. Butter
1/2 tsp. Vanilla

Steps:

  • Preheat oven to 300 degrees.Cover prunes with water. Bring to a boil and cook until soft and mashable, about eight minutes. Remove from heat, drain water, and mash on a plate. Set aside.Mix together oil, sugar, and eggs. In a separate bowl, sift together dry ingredients. Combine wet and dry ingredients, add buttermilk and vanilla and stir gently until just combined. Throw in the mashed prunes and stir gently to combine. DO NOT OVERMIX!Pour batter into buttered baking dish (9 x 13 or so) and bake for 35 to 40 minutes. DO NOT OVERBAKE OR INY WILL PADDLE YOUR BOTTOM.While cake has five minutes remaining, make the icing:Combine all icing ingredients in a medium saucepan over medium heat and bring to a slow boil. Boil without stirring for 5 to 7 minutes, or until icing starts to turn dark. Do NOT allow icing to reach soft ball stage; icing should be caramel in color, but not sticky like caramel. Icing should be easily pourable.Remove cake from oven and pour on icing immediately.Allow to rest on the counter. Serve warm.NOTE: There is absolutely zero “prune effect” associated with this cake. The end.

Homemade Funnel Cakes Recipe - Food Network image

Bring the carnival home with this classic fair dessert. Fried dough is crisp and golden brown on the outside and soft and cakey on the inside. Covered in a shower of confectioners' sugar and sprinkle of cinnamon, it's the perfect fun dessert for a casual get-together.

Provided by Food Network Kitchen

Categories     dessert

Total Time 45 minutes

Cook Time 45 minutes

Yield 8 large funnel cakes

Number Of Ingredients 11

Canola oil, for deep-frying
2 1/4 cups milk
1 teaspoon pure vanilla extract
3 large eggs
4 cups all-purpose flour (see Cook's Note)
1 cup packed light brown sugar
1 tablespoon baking powder
1/2 teaspoon kosher salt
1/2 cup confectioners' sugar
1/2 teaspoon ground cinnamon
Sweetened whipped cream, for serving

Steps:

  • For the funnel cakes: Add enough oil to a large Dutch oven or heavy-bottomed pot to come 2 inches up the sides of the pot. Heat the oil over medium-high heat until it registers 360 degrees F on a deep-frying thermometer. Line a baking sheet with a metal cooling rack or a few layers of paper towels.
  • Meanwhile, whisk together the milk, vanilla and eggs in a large measuring cup.
  • Sift together the flour, brown sugar, baking powder and salt into a medium bowl using a mesh strainer (to break up any lumps in the brown sugar). Stir the egg mixture into the flour mixture just until smooth and combined.
  • When the oil is up to temperature, use your finger to cover the hole in the bottom of a 1- to 2-cup funnel (with at least a 1/2-inch hole) and fill it to the top with about 3/4 cup of the batter. Position the funnel over the pot of hot oil and remove your finger to release the batter. Let the batter flow into the oil in thick squiggles, moving the funnel within a contained circular shape about 8 inches in diameter. Fry on the first side until golden brown, 1 1/2 to 2 minutes, then use a spider or tongs to carefully flip to the second side and fry for an additional 1 1/2 to 2 minutes. Remove to the wire rack or paper towels and let drain and cool slightly. Repeat with the remaining batter.
  • For topping: Dust the funnel cakes generously with the confectioners' sugar, sprinkle with cinnamon and dollop with whipped cream before serving warm.

  • *Cake recipe adapted from Better Homes and Gardens*Icing recipe adapted from SavorySweetLife.com(Note: You can use absolutely any cake you want, just as long as trinkets are added!)CAKEPreheat oven to 375 degrees. Thoroughly grease/flour a 9 x 13 baking pan (or spray with baking spray.)In a mixer fitted with the whisk attachment, beat butter until it's soft and fluffy, about 30 seconds. Add the sugar in batches, about a fourth at a time. Scrape the sides of the bowl, then mix again until totally combined and fluffy, about 2 minutes. Add eggs one at a time, beating for 20 seconds on medium after each addition. Add vanilla and mix until combined. In a separate bowl, stir together flour, baking powder, and salt. Alternate adding the flour mixture with the milk with the mixer on medium-low until all the ingredients have been incorporated. Scrape the sides of the bowl and turn the mixer on high for ten seconds. Remove bowl from mixer stand and fold in trinkets so that they're evenly distributed. (Note that you can also tightly wrap trinkets in small pieces of aluminum foil if you prefer.) Use an offset spatula to even out the surface, then bake for 22 to 25 minutes, until cake is just set and a toothpick comes out clean. Allow cake to cool completely before icing.ICINGIn a mixer fitted with the paddle attachment, whip the butter until totally soft and smooth. Sift together the powdered sugar, cocoa, and salt, then add gradually to the mixer, scraping the sides as you go. (When combined, mixture will be very thick/crumbly.) Drizzle in cream and whip on high until smooth, scraping the sides as you go. Ice the cooled cake in the pan.Cut 12 to 16 slices of cake with a serrated knife, being careful not to tear out any trinkets along the way (most of them settle close to the bottom.)***Be sure to tell everyone that there are trinkets in the cake beforehand so they can watch for them! Each trinket means different things. Here's the tradition from my church:Dime: WealthRing: Church's blessingsThimble: Increased industryButton: Increased spiritual knowledgeBaby: Will know Jesus betterShoe: Will walk in the ways of the LordBean: King of Epiphany! JAMIE'S TURKEY, PORK & CRANBERRY PIE | TURKEY RECIPES ...
Christmas is the perfect excuse to invest some serious time and love in creating something truly spectacular, and this Boxing Day treat won’t let you down – with its crumbly pastry, flavour-packed filling and spicy cranberry topping, this twist on a festive classic is hard to beat. 1. Preheat the oven to 180ºC/350ºF/gas 4.
    2. Peel and finely slice the onions, then place in a frying pan with 1 tablespoon of oil and cook gently over a medium heat for 30 minutes, or until dark, sweet and sticky.
    3. Pick and finely chop the sage leaves, then roughly chop the bacon and add both to the pan after 10 minutes. Once cooked, add the onion mixture to a large bowl and leave to cool.
    4. Shred the turkey and add to the bowl, then finely grate over half the nutmeg. Add the remaining filling ingredients and mix together well.
    5. To make the pastry, place the flour into a large bowl. Put the dripping and 300ml of water in a small pan over a medium heat for 10 minutes, until melted. Bring to the boil, then stir straight into the flour. Leave until warm and pliable, but cool enough to handle.
    6. Knead the pastry until smooth, then cut off a quarter, wrap it in clingfilm and reserve for the top of your pie.
    7. Working quickly, while the dough is still pliable, press it evenly over the base and up the sides of a 23cm loose-bottomed cake tin, until it’s about 1cm thick, patching up any holes as you go – you may not need all of the pastry.
    8. Place the tin on a baking tray and fill the pastry case with the cooled filling, then roll out the reserved pastry and place it on top, pinching the edges to seal and create a crust. Gently press down the top of the pie to create a slight indent to hold the cranberry topping.
    9. Using the handle of a wooden spoon, carefully pierce a hole in the centre of the pie lid to allow the steam to escape, then bake the pie for 30 minutes. Reduce the heat to 160ºC/325ºF/gas 3 and cook for a further 2 hours 30 minutes.
    10. Carefully remove the pie from the oven, brush the top with beaten egg and pop it back in the oven for another 20 minutes, or until perfectly golden, then leave the pie to cool completely.
    11. To make the gravy, soak the gelatine in cold water for 5 minutes, then remove and squeeze out the excess water. In a pan, bring the stock almost to the boil, then remove from the heat and whisk in the gelatine. Leave to cool to room temperature.
    12. Using a small funnel, pour the gravy into the pie through the hole in the top, adding just a little at a time and allowing each addition to sink in before adding the next.
    13. To make the cranberry topping, place all the cranberries in a pan. Using a speed-peeler, strip in the orange zest, then squeeze in the all juice. Add the remaining topping ingredients, except for the sage, and simmer for 15 to 20 minutes, or until thickened, stirring regularly.
    14. Taste and add a little extra sugar, if needed, then remove the cinnamon stick, cloves and orange peel. Leave to cool and thicken for 45 minutes, then spoon it on top of the pie. Place in the fridge overnight to set.
    15. Just before serving, pick the sage leaves, and fry over a medium-high heat until crispy, then scatter over the pie.

  • In a separate clean dry bowl, whisk egg whites until foamy, then add the remaining 1/2 cup of sugar and whisk until shiny and soft peaks form when removing the whisk from the whites. Gently fold this into the cake batter. Pour half of the batter into the prepared pan. Arrange the apples in the center of the ring all the way around, being sure they don't touch the outer or inner edge of the pan. Pour in the remaining batter and bake for 1 hour and 30 minutes. Remove the cake from the oven and cool completely. Put a large plate or cake plate on top of the pan, then holding both together, flip them so that the curved bottom of the Bundt pan is on the top and the plate is resting on a flat surface. Slowly remove the pan from the cake by lifting it straight up. Slice and serve.
