Individual Beef Pot Pies

450g lean stewing or braising steak, cut into 2.5cm cubes
1-2 tablespoons sunflower oil
2 tablespoons plain flour
2 teaspoons paprika powder
2 medium onions, peeled and chopped
2 garlic cloves, peeled and crushed
175g field or chestnut mushrooms, roughly chopped
300ml good, hot beef stock
300ml good red wine
2 teaspoons tomato purée
1 tablespoon brown sauce
2 large sprigs fresh thyme
2 bay leaves
450g unpeeled waxy potatoes, thinly sliced
25g melted butter

Steps:

  • Heat the oil in a large frying pan on a moderate heat. In a large plastic bag add the flour, paprika and seasoning. Add the beef and toss in the seasoned flour.Cook the beef in batches for 4-5 minutes until brown, turning occasionally. Transfer to a large casserole dish.In the same frying pan cook the onions, garlic and mushrooms for 3-4 minutes and transfer to the casserole dish.Add the stock, wine, tomato pure, brown sauce, thyme and bay leaves. Bring to the boil, reduce the heat, cover and cook on the hob for 1 hour 15 minutes, stirring occasionally.Preheat the oven to 200C, 180C,Fan,Gas Mark 6.Meanwhile, place the potato slices and melted butter in a large bowl and toss gently to coat.Spoon the beef equally into four 300ml round or oval ovenproof dishes. Finish with the potato slices, place on a baking sheet and cook for 45 minutes or until the potatoes are golden brown and cooked through.Serve the pot pies with seasonal vegetables and crusty bread.

Pastry
1 cup all-purpose flour
1/2 cup cornmeal
1 tablespoon sugar
1/3 cup Land O Lakes® Butter softened
6 to 7 tablespoons cold water
Filling
1 tablespoon Land O Lakes® Butter
1/2 pound top round steak, cut into 1/2-inch pieces
2 tablespoons all-purpose flour
1 cup beef broth
1 (15-ounce) can black beans, rinsed, drained
1 (11-ounce) can corn, drained
1/2 cup salsa
1 tablespoon chili powder
2 (3/4-ounce) slices Land O Lakes® Deli American quartered
1 tablespoon ground cumin

Steps:

  • Heat oven to 350°F.
  • Combine 1 cup flour, cornmeal and sugar in bowl; stir to mix. Stir in 1/3 cup butter with fork until mixture resembles coarse crumbs. Stir in enough water just until dough forms a ball. Wrap in plastic food wrap; refrigerate.
  • Melt 1 tablespoon butter in 10-inch skillet until sizzling; add steak pieces. Cook over medium-high heat 2-4 minutes or until browned. Reduce heat to medium. Add 2 tablespoons flour; stir to coat steak pieces. Add broth, continue cooking 3-5 minutes or until steak pieces are no longer pink and sauce thickens and comes to a boil. Stir in all remaining filling ingredients. Continue cooking 3-4 minutes or until heated through.
  • Divide pastry dough into 6 equal parts. Pat each piece of dough on floured surface into 4-inch circle. Place about 2/3 cup filling into each of 6 (12-ounce) custard cups or ovenproof bakeware. Place dough circles over filled dishes. Cut several slits in top of crust with sharp knife. Place pies onto ungreased baking sheet; loosely cover with aluminum foil. Bake 30 minutes. Uncover; continue baking 30-35 minutes or until crust is light golden brown.

  • Preheat oven to 400°F. Place four ramekins (12 oz. each) on a rimmed baking sheet lined with aluminum foil or parchment paper; set aside.  Stir together egg and water with a fork; set aside. Unfold thawed puff pastry onto a floured surface and, working quickly, roll out slightly to make a 10-inch square. Cut out four circles of pastry to fit the top of the ramekins using the outer edge of a ramekin as a guide.  Place the circles on a lightly floured baking sheet and refrigerate while preparing the filling. Meanwhile, melt butter in a 6-qt. Dutch oven over medium heat. Add carrots, onion, salt, and pepper and cook 4 minutes, stirring constantly, until onion is softened. Add potatoes and thyme, reduce heat to medium-high, and simmer 12 to 15 minutes until stock is thick enough to coat the back of a spoon. Stir in beef, peas, and vinegar and remove from heat. Ladle filling evenly amongst ramekins, then top each with a pastry circle. Cut small slits on top for venting. Brush egg wash over pastry and sprinkle with pepper, if desired. Bake 25 minutes or until the pastry is golden brown and the filling is bubbling. Let stand 10 minutes before serving.
