1 lb green beans (I just use frozen)
2 -4 tablespoons oil
1 teaspoon mustard seeds
1/2 cup onion, chopped
3/4 cup carrot, thinly sliced
1 teaspoon ground coriander
1/8 teaspoon ground ginger
1/2 teaspoon salt (or less)
1 -2 tablespoon lemon juice

Steps:

  • Cut beans into 1 inch diagonal slices. (I just use frozen green beans.).
  • Heat oil in a large skillet or wok.
  • Saute mustard seeds until they begin to "pop".
  • Add vegetables. Cook, stirring constantly for 5 minutes.
  • Mix in seasonings, reduce heat, cover, and simmer 8-10 minutes.
  • Stir in lemon juice and serve.

This is my family's traditional preparation of french cut green beans. You can apply this recipe to other vegetables, too. We use the same method for frozen cut...

Number Of Ingredients 7

1 16-ounce package french cut green beans (frozen, not canned)
1 teaspoon turmeric powder
1/2 teaspoon red chili powder
1 1/2 teaspoons salt
2-3 tablespoons olive oil
1/3 large white onion, diced (optional)
1/4 cup finely shredded unsweetened coconut (optional)

Steps:

  • Place a large, wide non-stick pan on medium to high heat. Add olive oil. When hot, add onions (if using) and cook until golden. Add green beans. Cover and cook for 10-15 minutes. Uncover and season with turmeric powder, salt, red chili powder, and shredded coconut (if using). Continue to cook uncovered for 10-15 minutes, stirring frequently so that the beans don’t burn. When done, the beans will be dark green and will have reduced considerably. Remove from heat and serve over rice.
